Perfect Turkey

Best turkey I ever made. I used Williams Sonoma brine mix, but then followed the recipe once I rinsed it off the following day. The turkey browned very quickly, and I had to put some foil to keep it from burning, but no big deal (I live at high altitude, and the 350 degrees may have been a bit high). Even with the very brown skin, it was amazing, tasty, MOIST and tender, everyone loved it! I added a lot of extra carrots and onions, and those were eaten up by the guests, as well.

Spinach and Strawberry Salad

Everyone raved, served at Easter! Used honey instead of sugar, raspberry instead of white wine vinegar, left dressing out at room temperature as another user recommended. I also used candied almonds instead of poppy seeds, and everyone loved the crunch. My husband avoids vinegrette dressings, but he loved this whole salad. Used a egg slicer to cut the strawberries, great idea.

Deliciously Sweet Salad with Maple, Nuts, Seeds, Blueberries, and Goat Cheese

Yummmy!! A crowd favorite at the bbq, so easy and quick. I used all ingredients, except traded pecans for walnuts. The dressing is simple but fantastic, try it the way it's listed. I bought extra ingredients, and made it a second day, added chopped cooked chicken breast, and had a wonderful salad for dinner.

Dessert Crepes

Perfect recipe, easy. Don't use a lot of batter, the goal is thin, light crepes. I filled mine with fresh strawberries and blueberries, put a small amount of real maple syrup and powdered sugar on top. My son ate five!

Pan-Seared Tilapia

Oh my! This was super quick, and tasted fantastic. My husband raved, and it only took 5 minutes. I like to use Bragg's seasoning mix, which I added to the coating. A keeper, and easy way to add more fish to our diet without having to use the bbq.

Brunch Omelet Torte

Fail proof recipe, no matter what changes you make to the recipe. Served at Easter, everyone really enjoyed it. I found the original recipe a little bland, but still tasty. The next time, I'll add spicy sausage and/or some diced green chili to the egg. I cut the strips of pastry, and laid them across the top in a lattice weave (9x13 pan), put some extra cheese on top in the empty areas. Worked great.

Harvest Rice Dish

This is a good side dish, I liked it a lot, but didn't love it. I used rehydrated mushrooms (good), fresh cranberries in sugar (too tart), diced onions (good), added sausage (try pork, I used a chicken pesto). Recommend light on pepper, as it seemed to overwhelm with just a few grinds.
