Roasted Beets with Feta

I had a roasted beet salad with blue cheese and pecans that was delish and thought this was very similar. I bought 6 small beet- with the greens already trimmed. Next time I would make more "dressing" for this amount. I ate it cold as a salad. Next time will also try blue cheese instead of the feta.

Baked Potato Soup

This soup is SO good and SO easy. Changes I made: I used precooked bacon bits, so had to use some butter to saute onion and garlic. I also used fat free half and half.

Tater Taco Casserole

Green Sauce Enchiladas

These were SO good! I made a few changes; boiled a whole chicken for the meat, used preshredded "Mexican style" cheese, and frozen corn.

Ground Beef Curly Noodle

Not bad at all. I used 3 packs of oriental flavor, 1 1/2 lb ground beef, 1 sm can of tomato sauce, a can of beef broth, a little water and some frozen corn and green beans. Quick and easy.

Baked Rosa Maria Fries

I made a few changes and it was AWESOME. I didn't have any cooking spray, so I used olive oil on parchment paper and recoated the potatoes with more olive oil. I also didn't have garlic powder, so I used fresh garlic. I didn't want to eat the garlic raw, so after the 22 min of cooking time suggested, I put the herbs and galic on potatoes and broiled them (they were not crispy yet because I used more then 4 potatoes). They were so good, I will make these again for sure!

Carrot Cake III

Best carrot cake! My 10 year old daughter made it for my birthday (with help)- used walnuts in place of pecans and only used 2 C powdered sugar for icing. SO GOOD!
