These were really yummy. I added herbs and cooked them longer on each side and they did get crispy. I would follow others' reviews and add garlic, a little salt and more herbs next time. Though my kids were not here this time around, I'm sure they would like these.

Roquefort Pear Salad

I absolutely loved this salad...in fact everyone did- I made it for a holiday dinner. I did use Gorgonzola instead of Blue Cheese since Gorgonzola is a little less potent and I wanted my kids to eat it too, but the complexity and wonderful balance of all the diverse flavors is amazing. I will definitely be making this again. Note: I thought there might be a lot left over, so I served the dressing on the side and let each person dress their salads individually.

Spinach and Potato Frittata

This was so yummy! I followed the advice of other reviewers and doubled the spinach, added a little more cheese and seasoned the potatoes while cooking them. I also added some turkey bacon to it. I have an electric stove and in order to get the eggs to cook I had to turn the heat up to med low rather than low. I will definitely make it again.
