Creamy Pesto Shrimp

I loved this recipe as-is, but will try some of the other reviewers tips. My kids never tire of this dish which is good because I bought an industrial pesto from Costco!

Stuffed Pork Chops with Gorgonzola and Apple

I dredged the chops in flour mixed with a little salt and rosemary before cooking. The flavors melded incredibly. I didn't butterfly the pork chops since I only had thin cut, but I put the sauce over it and it worked great. I served them with a side of Gorgonzola mashed potatoes (just stirred in about a quarter cup of crumbles).

Erik's Cheesy Cauliflower Casserole

I am on a low-carb, high fat diet and this is the perfect food! It is truly the best comfort food without potatoes in existence. It actually tastes quite like "hashbrown casserole" aka "funeral potatoes." It was easy to make (my ten year-old did it with little supervision) and the whole family had multiple servings. Because of the bacon and cheese, this casserole was perfect as a meal; just served with a side salad. I absolutely recommend this dish!

Chicken with Chipotle

My kids LOVED this recipe. My daughter fought for extra chicken and I ate the sauce plain over rice! I used the leftover chipotle sauce and added it to a bland chicken soup. It was FANTASTIC!

Chocolate Chip Banana Muffins

I LOVE these muffins. I felt guilty about the chocolate chips, so I used 1 cup of flour and 1/3 cup of quick-cooking oats in addition to the chips. Now I can be happy that my kids are eating them by the handfuls!

Marshmallow Fondant

I have some lessons-learned. I am not a baker and my daughter begged for a fondant-covered cake for her birthday so I tried it. My first batch stuck so bad to the plastic wrap that I had to throw most of it away. Either spray the plastic with cooking spray, or dump it out of your mixer right onto the kneading surface. I also sprayed my bowl before I put the marshmallows in it in the microwave, they dumped right into my mixer without sticking at all. I tried to spray my mixer and beater, but it didn't help. Also, you can't really make black fondant with the recipe as-is. After my fondant turned gray with half a container of black color gel, I realized I had to add cocoa powder first to darken it. I just substituted the cocoa for a cup of the powdered sugar. It got a bit dry, so I added another tablespoon of water.

Broccoli Cheese Soup

I have a few notes...this may be really obvious to most of you, but DO NOT ATTEMPT TO USE REAL CHEESE FOR THIS RECIPE. I hate the idea of using processed "cheese" food so I tried it with cheddar, which lumped and promptly burned to the bottom of my pot, even at a simmer. The one thing I would do differently were I to make this soup again the right way is to make a rue first, with butter, onions and flour or cornstarch right at the beginning. It is a lot easier than trying to add the thickener later.

Pork Tenderloin with Dijon Marsala Sauce

My father actually recommended this recipe to me. I am the busy mother of three children under the age of 10. I finally made this recipe after replenishing my Marsala stock and I can't believe how fantastic it came out (husband and kids loved it too). The pork was tender and juicy, and the sauce was restaurant quality for SURE! It was perfectly flavored exactly as the recipe reads...that said, I did a few small substitutions: I didn't have a shallot, so I used a small white onion diced and sauteed with about a teaspoon of garlic. I also coated the pork with the mustard AFTER I seared it on all sides in the pan, so the mustard didn't char. This will be the recipe I serve whenever I have guests to my home!!!!!

Cake with Buttercream Decorating Frosting

This is awesome frosting! If you keep it thick it is super easy to work with. If you let it sit for a little while, you can actually work with it a bit like fondant! Thank you for posting this recipe!

Celery Seed Slaw

We have used this recipe several times now and my entire familly adores it. I typically use half the recipe per half a cabbage head. I also let the cabbage marinate for a while so the cabbage becomes soft but not soggy. Then I pour off the remaining sauce and stir in a tablespoon or two of mayo. PERFECT for a side salad or to put on pulled-pork barbecue sandwiches!

Chunky Monkey Pancakes

We are moving and I was trying to get rid of the open pantry items that the movers wouldn't take. I found this recipe and set out to make pancakes that I could freeze for those early school mornings (This recipe freezes really well, cook, cool, layer parchment paper between pancakes and microwave for 30 seconds to a mintute when ready to serve). I had to taste them before I served them of course...think I am on my third, but am losing count rapidly! These are delicious, great recipe!

I thought the BBQ sauce was way too sweet. I like a more savory hickory sauce so I just added about 1/2 teaspoon of salt and 1/2 teaspoon of liquid smoke. PERFECT!!!1

Lime Cilantro Rice

My family devoured this easy twist to a typical staple. I served it with a lime-cilantro inspired 'mexican chicken cacciatore" on top of the rice. My kids liked it, hubby said "it's a keeper!"

Rhubarb and Strawberry Pie

Very easy, delicious recipe. I would cut back on the sugar as it was a bit too sweet. I only had one pint of strawberries...I sliced and refrigerated them overnight to dry out some of the juciness so the pie was not runny at all, and there were plenty of strawberries as I cut them each into four slices. Also DO NOT COOK THE RHUBARB! It will be a soggy runny mess, just slice it like you would a celery stalk...the thinner you slice it, the sweeter it will get with the sugar/flour mixture...if you cut it too thick, it will be very sour and possibly undercooked.

German Lasagna

HOLY COW IS THIS AMAZINGLY GOOD!!! I love this recipe and will fix it for company soon. It is so easy and delicious. I used only the cream of mushroom instead of the cream of chicken and added some dijon mustard. Instead of all of the cheese, I just grated some fresh parmazan into each layer and a little on top. I think any other cheese would make an already rich dish, over the top...it was perfect with parmesan! NO LEVTOVERS!

This was such a fast and easy dinner, I couldn't believe it. Also, my kids and my husband really liked it. I added some diced red bell pepper and some celery to give it some consistency and color. Next time I am going to do a pizza or taco version!

Shrimp and Asparagus

There was something missing from this recipe when we first made it, the flavor was very mild. We added a bit more salt and put in about a tablespoon of Grey Poupon Dijon mustard and it was so incredible, it could be served in a place like Macaroni Grill!!!!
