Orzo and Wild Rice Salad

I really loved the flavor combinations. I could not find currants so I subbed dried cranberries. I accidentally (long story) heated a serving of it up during lunch break. I couldn't wait for it to chill, so I ate it warm. It was still really good!

Golden Knots

Irish Spicy Cornbread

One of my new favorites! I love the way this cornbread tastes. It has a subtle spicy finish. I use Louisiana hot sauce, not Tabasco, and that affects the heat alot.

Roast Sticky Chicken-Rotisserie Style

I've made it twice. Once the skin was lovely, a little brown, and tender. Once the skin was dry. Both times the meat was perfect. I will make this again.

Garlic Parmesan Monkey Bread

This is easy with the frozen bread dough. I made a half batch tonight to eat with tomorrow's lunch. It smelled so good, we had to try it immediately. It was great!

Easiest Eggplant

This was easy and tasty. The pieces don't get soggy or limp as they cool, like they do if they are fried. I used crushed Ritz crackers as my seasoned bread crumbs.

Vegetarian Korma

We tried this tonight. I liked it a lot. It is not overly spicy. Only thing we changed was to use half and half. My daughter makes this often and says its even better with whole cream. We ate this with basmati rice and garlic naan. We had 2 hungry couples and there was a little left over, so the servings on this recipe are right on.
