Ground Beef with Homemade Taco Seasoning Mix
This was a great starting point for me when my son said, "mom, I want tacos." I chopped up shallots and garlic and cooked in a little homemade chicken stock. I added the beef and when browned I added the seasonings listed in the recipe (excluding salt, onion and garlic). Then to amp it up a bit I added fire roasted tomatoes and red kidney beans until the ratio looked good. I used chicken stock instead of water. When it cooked down I added fresh cilantro. I know in the end I changed the recipe a lot, but it was a much better base than the mixes.

Leek, Bacon, and Pasta
Great recipe! I was able to use only one pot. We used Rotelle because my 7 year old son picked the pasta and thought it looked cooler, Apple smoked bacon, more leek than the recipe suggests because the one I had was huge, baby bellas and light sour cream. The cook time is not 20 minutes if you read the directions and it could take longer depending on your bacon. The parsley was good, but I might try basil or a mix of fresh herbs next time.

Peachie Peach Pecan Nut Bread
Try it! I had a slightly smaller loaf pan so I made a loaf and muffins. The peaches I had were large so I only needed 4. It had the perfect amount of nuts and the texture/moisture was very nice. The loaf was loved by friends and family, but we all agreed it needed more cinnamon so after buttering the muffin pan I dusted it with a mixture of cinnamon and sugar (1tps cinnamon - 1T sugar). Perfect.
