Shrimp Francesca

Reviewed: May 4, 2011
Served this as a compliment to grilled rib-eyes. Very tasty recipe for shrimp when you want a little more than just shrimp cocktail or grilled shrimp. I will definately make this again!

Sesame Green Beans

Reviewed: May 4, 2011
These were very tasty - no leftovers! I had some green beans from the Farmer's Market and this was the perfect recipe for them. The only thing I added was a splash of soy sauce to the chicken stock. I served them with bourbon chicken and rice. Very, very good!

Company Potatoes

Reviewed: May 4, 2011
These were very good. I didn't have company coming that night - so I prepared the whole batch, but split it into two 8x8 pans. I baked one off and froze the other one to have later. (I can't wait to have the second pan!)

Soft Chocolate Cookies

Reviewed: Apr. 5, 2011
I actually used 1/2 cup of butter and a 1/2 cup of Crisco and I really loved the combo of butter and shortening. Really tasted close to an Oreo. Next time I want to make a white butter cream fosting and make sandwhich cookies out of them! Loved this recipe!

Tasty little recipe - I used ground chicken instead of beef and it turned out really well. Hubby ate four of them!

Glazed Chicken Wings

Reviewed: Mar. 29, 2011
This is a really yummy sauce;however, I had to tweak the cooking process a little. I baked it in the oven as advised; however, I ended up with tender little wings swimming in sauce. So, I fished the wings out of the sauce and poured the sauce into a saucepan - boiled it until it reduced way down to a syrup. In the meantime, I put the wings under the broiler for a few minutes until they had a little char on them - then I poured the reduced sauce over the wings and mixed it all up. It turned out wonderful in the end - family ate them right up!

Chili Dog Casserole II

Reviewed: Mar. 16, 2011
This was really yummy - the only changes I made were: I used corn tortillas instead of flour and I rolled up 1/2 slice of american cheese into it with the hot dog. My 14 year old loved it!

Old-Fashioned Chocolate Fudge

Reviewed: Mar. 7, 2011
Wow - this is a wonderful recipe; however, the success or failure definately depends on a) getting the mixture off the heat just as soon as the soft ball forms in ice water and b) you're going to beat this for awhile - however, just as soon as it begins to lose it's sheen - STOP! Pour it into your pan and wait for chocolately heaven! (I made this recipe once before and it turned out awful - dry and crumbly. Made the necessary adjustments and it was absolutely wonderful!) Good luck!

Refrigerator Cookies II

Reviewed: Mar. 6, 2011
I love these cookies - they are great dunkers for milk or coffee. One of my childhood friend's mother used to make these for us after school - now I know why. It's so convenient to have these waiting on you in the fridge for whenever you are ready. Thanks for the recipe!

Chewy Coconut Cookies

Reviewed: Feb. 3, 2011
LOVE these cookies! This is always my go-to recipe when I have leftover coconut to use up. I like to add 1/2 t. of coconut extract if I have it, but it is still very yummy without. Plan to add some macadamia nuts the next time around!

Famous Pork Chops

Reviewed: Feb. 3, 2011
Loved this recipe! I used 8 thin sliced boneless pork loin chops and it tasted very much like schnitzel! Very good! I also added a tablespoon of dijon mustard to the egg mixture - then shallow fried the chops in a 50/50 mixture of butter and olive oil - 2 minutes per side. They were soooo good - the boys loved them! Served it with a mustard potato salad and green beans.

Mama's Asian Chicken and Rice

Reviewed: May 2, 2010
This was very good - a keeper! I didn't have any green onions, so I sauted about half of a small sweet yellow onion with the chicken and it came out great! Also - served it over brown rice with a couple shredded carrots added to the rice at the end. I also added about 2 T. of orange marmalade to the sauce since I had some hanging out in the fridge.
