Green Tomato Mincemeat

This is really great! I scaled the recipe back to 4 servings to make and see if we liked. I didn't have any oranges so I put in more lemon. I used it to bake a pie and it was awesome. I plan to make more and freeze it instead of canning. I did cook uncovered for the last hour because it was really juicy.

Pineapple Upside-Down Cake II

I gave this a five star rating, assuming the amount of butter was incorrect. I used 1/2 cup butter total. I little more than 1/4 cup for the cake and the remainder for the topping. I used 1/2 milk and 1/2 pineapple juice for the 3/4 cup milk. This cake was okay the day I made it, but it was awesome the next day. So, if you need a make ahead dessert with ingredients you have on hand, this might be the ticket!

Jay's Signature Pizza Crust

This crust is excellent! It takes a while to cook, so watch your toppings to make sure they don't burn. We now make two at a time because it gets eaten so quickly.

Light and Fresh Dressing

This is a great recipe. The first time I made it, I halved it, to see how we liked it. It was gone in a flash. When the salad was gone, I was dipping anything I could find in this. I used balsamic vinegar which tasted great, but looked like watery chocolate milk. Thank you, Shelly!

Mediterranean Pasta

We really enjoyed this recipe. I cooked the bacon and chicken together with some garlic and drained the grease before continuing. I added two cans of tomato to make it stretch a little further. Then I got scared that I had ruined the recipe, but after 20 mins at a simmer it had cooked down and wasn't so juicy. This was so very, very good!

Caramel Popcorn

Great recipe! This works great with 2 bags microwave popcorn. Hints for easier clean up: foil wrap the two pans and spray with Pam. Pour the popcorn directly into the pans, pour half the sauce over each and mix right in the baking pan. Wash the sauce pan IMMEDIATELY before the caramel hardens. Oh so good!

Marinated Cheese

I made this for an appetizer for the 4th of July. It was very, very good. I substituted low fat cream cheese and it kind of melted into a blob, but a very delicious one. The cheddar held it's shape well and was very good plain or on a cracker. If it's warm and you want a good presentation, serve on ice. But it is so good, no one will really care what it looks like. Thanks!

Butternut Squash Bisque

This is awesome. Since I am knife challenged, I split the squash and scoop out the guts and cook in a 350 oven for about 30 mins per side. After the first 30 minutes I start making the soup. When the squash is done, I let it cool, then scoop into the soup and mush it all with a potato masher. I usually use half and half instead of the cream. A very good recipe.

Enchiladas Suizas

These were great! Followed the recipe except cooked the shredded chicken in lime juice and chili powder before adding. This is a time consuming recipe, next time I make it, I'll make ahead and add the cream just before cooking. These taste like something you would order a a REAL mexican restaurant. Thanks for the great recipe!

Buffalo Style Chicken Pizza

Wow! I was a bit skeptical, but this is delicious. Since this is not very healthy, knock yourself out and splurge. For a killer combo use Jay's Signature pizza crust and Bill's Bleu cheese dressing, both at allrecipes. I just thinly coated the top of the crust with the bleu cheese. This is also great cut into squares and served as a snack or appetizer.

Tasty Tuna Burgers

I make these quite often. They are delicious and somewhat addictive. Make ahead of time and chill in the refrigerator and they won't fall apart. With our younger kids we serve without the bun and they love them. I highly recommend this!
