Apple Cake IV

Very delicious. I made a few changes. Per other reviewers, I decreased oil and sugar to 1.5 cups. Also, I substituted almonds for the walnuts. I also scattered more apple slices on top, which provided a visual improvement. Next time, I will substitute almond extract for vanilla. I am enjoying a piece now with a cup of coffee and a good book. A keeper.

Elnora's Peach Cobbler

This was marvelous and very easy. I added a bit of vanilla to the batter, and increased all of the batter ingredients used 1 1/2 cups of sugar, flour and milk. I used a 13"x9" pan. I also added a half pint of raspberries to the peaches...yum! The raspberries added a nice flavor and color. Delicious!!

Marty's Thai Chicken Satay

What a hit with the family! It was so good that my 16 year old daughter insisted on taking the meager leftovers to school for lunch today! I found all of the ingredients at my local grocery store except the taramind paste, which I found at an Indian grocery store (who knew one was 5 miles away?). I suggest the tubed minced lemongrass (they sell ginger like this too in my market's produce section). You get 6 stalks in the tube and then you can refrigerate it for later use. I followed the recipe to the tee and it was perfect. I even made a cucumber salad with it and served it with naan....Target sells excellent naan from it's bakery. Enjoy...we will again soon!

Buche de Noel

I made this for Christmas this year and the entire family loved it. My husband said it was the best dessert I had EVER made. I have to admit, however, that I was skeptical when I took it out of the seemed so thin, but it rolled up nicely. I scored it with a fork to make it look like a log. I only dusted it with powdered sugar added a few candied cherries for decoration. If you like chocolate, keep the recipe as is. It would be wonderful for anyone who has celiac disease, as it is gluten free. I know my family now expects this every year for Christmas!! Now it's Easter...and my family want "the Buche", it's "Buche de Pacques"...I omitted the cocoa powder in the it was just vanilla. Then, I made more whipped cream and frosted the whole log and decorated with peeps and jelly beans on the side. It was awesome! Lighter and not as chocolatey as the Christmas version. "Best dessert in 20 years of marriage" raved my husband!
