Homemade Sweet Italian Sausage (Mild or Hot)

The description says not to use ground beef but that is what I had...and only 2 lbs of it. For the spices I used the measurements indicated. The only other thing I did differently was 2 Tbls of vinegar vs. 3 and I didn't add any sugar. This sausage was amazing!! We don't eat pork and I have been unable to find an Italian sausage that wasn't pork or wasn't in a pork casing at the grocery store. I wouldn't even bother after having this. Thanks for the recipe! It's a keeper!

Butter Pecan Ice Cream

My daughter made us this ice cream with her ice cream maker. She used xylitol instead of sugar and only used heavy cream. It was the most delicious ice cream!!! We specifically have been working on an ice cream recipe with no sugar for the anti-fungal diet. The cream is allowed but the sugar is not. Xylitol and stevia are it. So we were so pleased.

World's Best Lasagna

I made the recipe for a pot luck. I followed the directions - except I used 1 can tomato paste. It was not very good at all. As I looked around the room most people didn't even eat theirs. It was so strong in tomato flavor and dry. I don't know why some folks' turn out so well and mine was not good at all. It sounded so good and the pictures looked great.

Chicken Puffs

Wow! So delicious. I didn't have croissants so I used Pillsbury pie crust...so they were more like a pasty. I used 3/4 of an onion cooked in 3 T butter, garlic powder, and salt...all to taste. I boiled my chicken and then cubed. Baked at 350 for 30 minutes. Easy and not alot of cleanup.

Pancakes I

I didn't like this recipe very well. It was too runny and the pancakes had to get really brown in order for me to flip them without falling apart (almost burnt). Further, they were almost the consistency of belgium waffles. I like mine cakey. The kids didn't seem to care though. I'll stick with the box mix where I can just add water.

High Temperature Eye-of-Round Roast

I actually used a bottom round roast (a 5 lb'er). This method of cooking beef is the best. The roast came out almost tender, was only slightly pink in the center, and made plenty of au jus (sp?). If you have the time...you must try this method.

Basic Crepes

Batter was a little thick. I had to add about 1/8 cup more water. I hadn't made crepes in years...so it took a couple "oops" crepes before I got the hang of it. Served with whipped cream and strawberries. So delicious.

Foolproof Rib Roast

Used a 6 lb roast. Seasoned w/ salt/garlic and cooked per directions. The last hour I took out and added carrots and potatoes + a little turkey broth (all I had). It came out very well...not quite pink enough though. I had a hard time slicing the meat because of the bones. It really was delicious and the dog got to have a few bones. This really is a great cooking method; but so time consuming that I can only do it on a day off from work.

Quick and Easy Alfredo Sauce

Wonderful! I made the recipe almost to the letter. I used half & half and real garlic. It really was delicious. I had read the reviews and someone said how bland it was. There was plenty of flavor and so creamy. I did find that the pasta soaked the sauce up. Next time I will double the recipe for the 2 lbs of pasta my family eats.

Romaine Rice Tuna Salad

I must have done something wrong or my Balsamic was too vinegary. It wasn't horrible but I had lots of leftovers to eat. I added walnuts and feta cheese...this really helped. I also added canned spinach as it was all I had. I like the idea of this. Many times when I have rice and salad I will mix the 2 together. I'll have to think about this one before I make it again.
