Shredded Brussels Sprouts

Reviewed: Nov. 28, 2013
This is probably the best brussel sprouts I have ever had and my husband even complimented the dish (which is a big deal, since he usually chokes brussel sprouts down when I make them). I just used some bacon pieces rather than cooking my own and added a big handful of craisins too for some sweetness. Otherwise cooked as directed. Great recipe! I will definitely make this one again!

Orange Pecan French Toast

Reviewed: Apr. 4, 2010
I thought this recipe was wonderful! I did use walnuts rather than pecans and added some extra orange zest, but this was just for my own preference. If I made again I would probably add a little more egg than the recipe calls for, but thought the egg amount stated in the recipe was fine. The recipe is a keeper!

Cavatini II

Reviewed: Apr. 4, 2010
I loved this! I added sausage per some of the other reviewers' suggestions and only used the rotini pasta. (I didn't see the point of using 3 different types of pasta.) But I thought this recipe was pretty much perfect!

Marinated Greek Chicken Kabobs

Reviewed: Apr. 10, 2010
This was so good! My husband always complains that kabobs don't have enough flavor but thought this recipe was wonderful. I didn't have feta cheese with basil and sundried tomatoes, but I did have each of those ingredients. So, I used 1/3 cup feta, about 1/3 cup sundried tomatoes and apprx 1 Tbs basil. I set some of the extra marinade aside in a separate container to serve with the kabobs after they were cooked b/c I always like to dip. Anyway, it worked out great! We were loving it and plan to make it again!

This was so good. I added some chopped red bell peppers, but otherwise followed the recipe. It turned out perfectly! I'll definitely make this again!

Holiday Brie en Croute

Reviewed: Apr. 18, 2010
Some of our friends get together each month to do a progressive dinner. We were in charge of the appetizer this month and made this along with another dish. It was so good! I elected to make use the apricot preserves which I loved and left out the almonds to save a few calories. Anyway, it was heavenly and I would definitely recommend it to anyone!

Mango-Strawberry Salsa

Reviewed: Apr. 19, 2010
Loved this. Definitely add the cilantro and jalapenos, to taste. I served over grilled chicken but saved remaining to serve with tortilla chips later!

Chicken, Asparagus, and Mushroom Skillet

Reviewed: May 24, 2010
This had great flavor! I decided to use pork chops instead of chicken with great results. As suggested by some other reviewers, I added some onions and capers to the dish as well as more lemon and white cooking wine (a total of 3 Tbs each).

Firecracker Grilled Alaska Salmon

Reviewed: Jun. 2, 2010
My husband kept on saying he couldn't believe how good this was. I also marinated some shrimp with the salmon. I served with grilled red peppers and zucchini over rice.

Watermelon Summer Salad

Reviewed: Jun. 15, 2010
This is yummy and unique! I followed the recipe as written and really like it. I do think in the future I might cut down on the amount of onion, though.

Spicy Cuban Mojo Chicken with Mango-Avocado Salsa

Reviewed: Jun. 16, 2010
This is awesome! I followed the recipe as written, except that I added some cornstarch to thicken the sauce and didn't add the full amount of butter to reduce the calories. So yummy! I will definitely make this again.

Absolute Mexican Cornbread

Reviewed: Jul. 31, 2010
I followed other reviewers' advice and only did 6 Tbs of butter and 1/3 cup of sugar. I also cooked it as cornbread muffins to cut down on cooking time. It turned out great! I will definitely be making this recipe again!

Easy Blueberries And Cream French Toast Sandwich with Orange Maple Syrup

Reviewed: Nov. 6, 2010
So easy! I did not use the red wine or the red pepper flakes in the syrup and it still came out great! I also used cinnamon swirl bread from a local bakery. I will definitely make this again!

Thai Shrimp and Noodles

Reviewed: Jan. 11, 2011
I have made this with both chicken and shrimp. Both were fabulous. I made sure to double the sauce. Also, I didn't bother to marinade the shrimp in the Italian dressing; the peanut sauce was yummy enough on its own. This really is amazingly good! I am already planning to make it again soon!

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

Reviewed: Mar. 13, 2011
This was great! We drained the liquid and served over rice with A Hint of Lime Tortilla chips. Also topped with Cheddar cheese and sour cream. I also added a small can of green chilies while cooking, as others suggested.
