Porcupines

Reviewed: Jan. 21, 2012
This recipe is DELICIOUS! However, it only gets 4 stars instead of 5 because as it is written, the meatball mixture is very wet. I had to add to it some cooked rice to get it to sort-of stay together, even after adding two eggs (I doubled the recipe). So next time - and there WILL be a next time - I make this recipe, I'm going to halve the amount of water that goes in to the meatball mixture. For sides, I served this with mashed potatoes and broccoli - yummy! Oh also, I made this with ground chicken instead of beef. Maybe that was my problem with getting the meatballs to hold together?

White Wine Chicken Soup

Reviewed: Dec. 23, 2011
This is a great base to start with but the seasonings definitely need adjusted - the soup is a little bland and needs a LOT of salt. But a great start! I love using white wine as part of the broth and it gives it a good wine flavor.

The Best Rolled Sugar Cookies

Reviewed: Dec. 22, 2011
These cookies are EXCELLENT! I rolled mine a little thicker so they would be chewier when cooked and they were delicious - they browned perfectly. If you're looking for a sweet, sweet cookie these aren't it, which is great because then the decorative icing adds the extra sweetness.

Tuna Noodle Casserole from Scratch

Reviewed: Nov. 7, 2011
As written, there is not enough sauce or flavor (even after tripling the garlic and adding LOTS of salt and pepper). It's a great base as a start and I'll use this again, but will make more sauce with a bit more garlic and any other spice I can think of to jazz this up.

Sophie's Zucchini Bread

Great, great recipe! I followed some other suggestions and used a scant cup of oil as well as some extra nutmeg and all spice. Delicious!

Mom's Zucchini Bread

Reviewed: Sep. 17, 2011
This is a great recipe! I did only use 2 cups of sugar, however and followed another reviewer's suggestion to make one of the cups of sugar brown sugar. I also upped the zucchini by half a cup. I think next time I'll increase the zucchini even more and take the sugar down by another half a cup and maybe throw in a dash of nutmeg. Overall, a good moist bread!

Fruit Smoothie II

Reviewed: Jul. 2, 2011
Like other reviewers said, this turns out very thick. I didn't have grapes on hand so I used strawberries instead and didn't add the extra sugar (extra empty calories). I ended up using several large splashes of orange juice to thin it out, which also added some good flavor.

Easy Zucchini Parmesan

Reviewed: May 8, 2011
This recipe is a great start! My only complaint is that it ended up WAY too watery after boiling the zucchini. Next time I'll make sure to dry the zucchini much better - but I will definitely make this again!

Chocolate French Toast

Reviewed: May 6, 2011
This is a GREAT idea! I will definitely use this as a base recipe again - substituting anything I can think of for the chocolate! My only complaint is that I thought this recipe calls for too much egg. Next time, I'll reduce to just two eggs instead of three.

Karen's Cookie Dough Brownies

Reviewed: Apr. 23, 2011
Overall, good recipe but I found the brownies to be too cake-y for my taste. I prefer a more fudge-y brownie. Also, don't refrigerate these for too long or else the chocolate on top completely hardens - makes it harder to cut.

Spring Lime Tea Cookies

Reviewed: Apr. 18, 2011
Absolutely LOVED these cookies! Six of us girls ate the whole batch in one sitting - they're that good :-) The glaze almost makes them too sweet (I took a few other reviews recommendation to use powdered sugar instead of regular) but I have a huge sweet tooth - just be aware the glaze makes them really sweet. Great recipe if you like lime! Oh, I also added some lemon juice because I didn't have enough lime - so good!

Chinese Chicken Fried Rice II

This was a great base to start with! I didn't add chicken but added some thinly sliced carrots and mushrooms. I followed another reviewer's advice and added garlic as well and used sesame oil instead. Delicious!

Fiery Fish Tacos with Crunchy Corn Salsa

Reviewed: Mar. 12, 2011
These were DELICIOUS! I didn't use any jicama in the salsa but did add some black beans and it was soooo good. However, I would definitely suggest cutting back to about half on the spices for the fish. I had a lot left over. Also, I would reduce the proportion of cayenne pepper - SUPER spicy. We also added white rice to the tacos, which helped with the spice. I will definitely be making this again!

To Die For Blueberry Muffins

Reviewed: Jul. 20, 2010
These were great! I didn't have a regular sized muffin pan so I made mini-muffins and they turned out fine - just cooked them for a shorter amount of time, about 16 minutes. The only thing I might do differently next time is add a bit more sugar as the batter wasn't quite sweet enough for me but that could also be because I didn't add the topping. I also had no trouble getting them out of the pan - just use lots of Pam! I will definitely make these again!

One Bowl Brownies

Reviewed: Apr. 4, 2010
I tried baking these brownies last night and followed the recipe exactly (minus the nuts) and after 55 minutes in the oven they were still not cooked all the way through while the top had formed a hard crust. I will never use this recipe again!
