Baby Carrots with Dill Butter

Definitely that slight difference that I was looking for in a carrot side dish recipe. I like that it was simple, not sweet, but still quite enjoyable. Dill would not have come to mind without seeing this recipe, but I am glad I tried it. My guests liked them as well.

Delicious Pineapple Muffins

Yes, I liked this recipe, because it was just what I was looking for. A base recipe for pineapple muffins that used ingredients I had on hand. Did I change some things? Admittedly, yes. But, I always do that. I read through the reviews and decided to make these changes: Used half whole wheat flour, added a drizzle of oil to batter so they would not stick to liners, added the crushed pineapple to batter instead of topping, used softened butter in topping, decreased amount of topping. Result? So good! I would make again!

Zucchini Tomato Pie

I added shredded cheddar, extra leftover veggies we had, extra egg, herbs and did as others suggested - I sauteed the onion and zukes in olive oil with 2 small minced garlic cloves. The result? EXCELLENT. My tomatoes were sliced thin instead of diced and I also sliced my zucchini after taking all the seeds out first. So happy it turned out so well b/c this is going to be a meatless dinner for my meat-loving husband!

Roasted Cauliflower and Leek Soup

Yum! I could not make exactly as written. However, if I could have it would have been just as delish, if not more. I roasted caulif in oven with baby carrots, 2 garlic cloves, drizzled with olive oil. Meanwhile, leeks were sauteing in olive oil, soon after added 3 diced potatoes. Skipped the flour and heavy cream altogether. Instead, I found a cream of onion soup in the cabinet to add to the chick stock. No spices used except for S&P. Used immersion blender to "cream" all together after simmering all for about an hour. Topped with shredded cheddar. So so so good.

Cocoa Oatmeal Cookies

I think this is an awesome cookie recipe. I took another reviewer's advice and added some peanut butter at the end with the oats. I skipped the raisins. In addition, I had some patriotic marshmallows left over so when the cooking time was about 2-3 minutes out, I took the cookies out, plopped a star marshmallow on top and put back in oven to get slightly melty. The taste was heavenly and the gooey marshmallow put it over the top!

Lazygirl's Ground Turkey Stroganoff

I thought this was a perfect quick tasty supper. Made wheat noodles, chopped one small onion fine, cooked that with a little oil and two cloves of garlic, minced. After about 5 minutes, I added the ground turkey, cooked thoroughly, added the bullion cube, soup and water. Super excellent in my opinion. Left out the paprika and salt, but didn't miss it due to salt in bullion. Served with steamed broccoli. Husband had multiple helpings which = GOOD! Thanks for the recipe!

Sausage Soup

I tweaked this with just minor changes based on what leftovers I had on hand. Added sliced radishes, yellow squash and leftover ground beef and diced baked potato...then some beef broth for more liquid - I think it tastes really great! Glad I found this recipe!

Amazingly Easy Irish Soda Bread

I took other reviewer's suggestions: used 1 cup wheat flour and 3 cups all-purp and added lots of raisins that I soaked for a few mintues in warm vanilla extract (those got plumped up and yummy). Turned out slightly dry and crumbly, not sure what I did wrong, but otherwise quite delicious for my first try!
