Vanilla Wafer Cake II

I baked it twice and made a cream cheese frosting. The first time, I used a bundt pan. It stuck to the bottom (even though I greased and floured heavily). I substituted 2 bananas for the coconut. The second time, I used a sheet cake pan and used 1/2 cup LESS sugar. The cake was too sweet for me with 2 cups of sugar, given the sweetness of the cookies. The texture is very thick, but moist and tasty. I've only baked it for my household. I haven't ventured to bake it for a crowd yet.

Sweet 'n' Hot Glazed Salmon

I tried this recipe over the Memorial Day weekend. My teenager asked me to use peach nectar instead of the apricots. It was delicious. It presented and tasted like an entree that I'd order on a cruise ship! My son has a very discriminating palatte and he devoured most of the salmon. This recipe is a keeper. I think I'll try it with chicken wings next time.

Apple Lasagna

I thoroughly enjoyed this one! It's like an apple pie, but without being too sweet. Every ingredient blends well together for a very surprising, yet pleasant taste experience. Next time, I might try it with cherry pie filling.

Mom's Squash Casserole

Very good combination of flavors, however, still just a little bland. I added a little garlic powder, italian seasoning and seaasoned salt to my individual helping. It really gave the dish a pick-me-up.

Country Pineapple Casserole

A co-worker shared this recipe with me about 25 or so years ago. The recipe doesn't require lemon juice, and only 1 20-oz. can pineapple. I cut back on the sugar and it's been a hit every time. Friends ask me to make it for their special occasions. I can't attend a Holiday dinner with family or friends without bringing this dish. My son (the culinary student) raves about it. It's a Holiday Tradition in our house.

Buffalo Chicken Wings I

Very tasty, but not nearly hot enough for me. I added more hot sauce (Glory Hot Sauce)to suit my taste. The sauce was a little thin and didn't coat the wings well. Instead of salt and pepper, I used Sylvia's Sizzlin' Hot Spice to season the wings. Next time, I think I'll try dredging my wings in a little flour before I fry them.

Chai Butter Cookies

A big cookie hit in my house! I used an instant Chai Tea mix from my pantry. It gave it a wonderful buttery Chai flavor, very similar to gingersnaps, but chewy, not crispy. Love 'em! My son, a culinary student, said "These cookies are addicting!" Thanks to the review warning from Nanpie, I was prepared for my hand mixer to be overworked. My poor mixer motor started to smell like it was burning. I added a couple of tablespoons of cold water intermittently to the batter as I folded in the dry mix. Be careful not to add too much. This recipe actually yielded 5-1/2 dozen nice sized cookies.

Sweet Potato Biscuits

Quick and easy to make. Excellent with melted butter. I didn't feel like rolling the dough on a floured surface, so I opted to drop the dough from a tablespoon on a baking sheet. Next time, I think I'll add some spices to the sweet potatoes before mixing them into the dough for a little zip.

Banana Pudding IV

I used to make the banana pudding recipe in the Nilla Wafer box-as did my mom. It was traditional and I didn't like any other recipe, until now. I used this recipe a couple of times and it is a hit in my house. It is quick, easy and tasty. It is my new fav dessert go-to.
