I'm Kelso. I'm 16, and I've been cooking since I was about 7. I've always loved cooking, and I love changing things up to make them MY way. I recently competed in the PROSTART culinary competition in Sheridan, Wyoming and loved every minute of it.

My favorite family cooking traditions
When I was younger we used to go camping a lot, and every year my mom would fire up the dutch-oven and make AWESOME pot roast. For some reason, it always tastes better when it's cooked in a dutch oven.
My cooking triumphs
=) Recently, my High School obtained a new Super, and that dick head decided to make us do finals. Never in my four years of attending G-S JR-SR high, have I ever had to do "Finals". On top of that, the guy is a clock nazi and has been on my case all year for being late for classes. In my culinary class, my "Final" was a "Cook Off" set up just like ProStart. 60 minutes to prepare a four course meal, using only two butane burners and two of the judges were Mister Clock Nazi and the tramp he cheated on his wife with. After I kicked everyone's and took first in the competition, he awarded me my medal. The next day, after I was late again, he pulled me into his office and asked WHY I was late. I just looked at him. Then he said "Good job in the cook-off. Your dish was amazing." and he sent me on my way. DOUCHE BAG!!! =)
My cooking tragedies
When I was younger I attempted to use a (not-so-easy) recipe to make mousse. TOTAL DISASTER. I didn't whisk the chocolate into the whipping cream fast enough and there were huge chunks of chocolate in it. It was terrible! After refrigerating it, the chocolate chunks were like rocks. =(

Watermelon and Strawberry Lemonade
As a final, my culinary class has decided to have a picnic (of sorts, on account of rain) but I'm looking forward to drinking this later! =) The recipe was super simple. I can't wait to try it.

Banana Cream Cheesecake
Super recipe. I made it in my foods class last week, however had to change the recipe up a bit because the school (of course) wouldn't allow the banana liquor. We looked around in the kitchen for something else banana...but couldn't find anything. So we used some almond extract. Still tasted good. Ill definitely make this recipe again WITH the liquor. =)

Peppered Shrimp Alfredo
I'm currently enrolled in a Culinary Arts program at my high school. We competed in the Prostart regional competition back in March; however, did not place. My instructor then decided as our finals, we would have an "Iron Chef" competition (run exactly like Prostart) 60 minutes to dish out an appetizer, a starch, a vegetable, a protein, and a dessert using only two butane burners. I used this recipe as my protein and my starch, and I am happy to report that I took first. All the judges loved the recipe, and so did my family when I made it for them. =) The only thing that I changed was the amount of cream. I recommend cutting the amount in half. THANKS! Success is a dish best served SPICY!
