Meatball Nirvana
I was up against my mother in law's meatballs that my husband loves so. He absolutely loved these. I definitely was able to compete. Thank you for the delicious recipe. I served it with a creamy tomato sauce over fettucini and it was amazing! I didn't make one change to the recipe, which is rare for me. It all worked out perfectly! :)

Beef and Bean Chimichangas
This recipe is phenomenal! My husband doesn't even care much for Mexican food and it is now one of his favorites! I only made a slight alteration, (added a small can of ChiChi's chili peppers) which is rare for me. I usually try to get creative. This recipe didn't require it, though. I would recommend that you get 2 cans of beans if you want enough for all of them. I went pretty skimpy on each one and still almost ran out. These are just so easy and so delicious, I can't say enough about it! :)

Beef Enchiladas II
This was a great start to a delicious dinner. I made some revisions to make it even better. As someone else suggested, I added chili peppers and taco seasoning in the beef. I also used the canned sauce as someone recommended. Just make sure that you get the large can. The smaller one isn't enough. In addition, I would also double the amount of cheese. I actually added pepper jack cheese on top of the cheddar and it was fantastic! I served it with Spanish rice and refried beans. Delish!
