Homemade Black Bean Veggie Burgers

Reviewed: Apr. 14, 2010
Mmmmmm... very good! I did make a few changes, though. I, being a garlic lover, nearly doubled the garlic which gave it a nice flavor. I didn't have hot sauce so added some taco seasoning, pepper, and garlic powder. I also used 3/4 c. of oats instead of bread crumbs, and they worked really well. I found, however, they needed to be baked a few minutes longer. They tasted good but not exceptional, the reason I am giving this 4 stars. I'll add more spices next time. Everybody loved them, I will definitely make them again!

Spinach Brownies

Reviewed: May 10, 2010
These were great, everyone devoured them. I did, however, make some changes. We never have milk in our house so I used rice milk which worked very well. I also added some garlic powder, pepper, and Italian seasoning. We're spinach-lovers so I upped the spinach by 50%. Very good, rich recipe. Thanks! Peace...

Mom's Zucchini Bread

Reviewed: Aug. 8, 2010
This was delicious! I have never made zucchini bread before, but this was very good and super easy. I subbed 1/3 of the flour for oats, used 1/2 oil and 1/2 applesauce, and used 1/2 white and 1/2 brown sugar. Again, it was great! I think next time I might up the zucchini, vanilla, and cinnamon and maybe cut some of the sugar. Give it a little extra boost of flavor without making it too sweet. This is definitely a keeper. Thanks for sharing the recipe :)

Vegetarian Gravy

Reviewed: Aug. 23, 2010
Absolutely delicious, could never tell it was even vegetarian! The only thing I would do is cut down on the oil, much to oily. Maybe cut it in half.

Fluffy Whole Wheat Biscuits

Reviewed: Aug. 23, 2010
I'm sorry, it just didn't work for me. They were doughy, not fluffy, and had an odd flavor. I don't know what happened... Maybe it needs more butter?

Tzatziki Sauce I

Reviewed: Sep. 1, 2010
Great recipe: fast, easy, and quick clean-up! It tasted a bit plain, so I added some Mediterranean seasoning. Also, I had no dill so used about a 1/3 c grated cucumber. Delicious! I will definitely be making this again

Spinach and Feta Turkey Burgers

Reviewed: Sep. 1, 2010
D.E.L.I.C.I.O.U.S So easy to make as well! I added some Mediterranean seasoning and served with tzatziki (Greek cucumber yogurt sauce) and on wheat Medit. style flat bread. Big hit, can't thank you enough! Plus, even though I halved the recipe, it still made a lot.

Zucchini-Chocolate Chip Muffins

Reviewed: Sep. 13, 2010
AMAZING! Everybody loved them. Because we wanted these for breakfast, I healthed 'em up a bit by using whole wheat, regular, and oat flour. I also cut the sugar a little and used brown instead of white. Then I used half olive oil and half applesauce. No one knew they were low fat, multigrain, and that they had veggies. When I ran out of applesauce, I decided I had some apples and some time, so I put chopped apples in a saucepan and sauteed them until soft with some cinnamon. I subbed half the oil for it, and I swear... best thing ever!! Best muffins I ever made. Then I decided once to try it with half oil-half yogurt like a friend suggested to me. DO NOT DO IT. DO NOT!! They turned out hard and rubbery on the outside and gooey and gross on the inside, even after baking them at 200 for 20 more minutes. I would recommend using half oil-half sauteed cinnamon apples. Very yummy and very healthy :) Thanks for the recipe!!
