Jo's Rosemary Bread

I thought this bread tasted very good, but it didn't rise very high for me, so I had a rather dense loaf of yummy bread :) I am going to try tweaking it a bit to see what works best for this loaf with my bread machine.

Four-Grain Bread

This bread was really good! The only thing I changed was I added some vital wheat gluten to it. I may leave it out the next time I make it to see what kind of difference it made. The cornmeal and honey made it pretty sweet, but I like sweet bread, so it was a good thing to me. It came out very moist, the crust was slightly crunchy, and it smelled wonderful while baking. Can't wait to try it toasted. Adding it into the bread rotation!

Vanilla Spice Bread

YUMMY! I went ahead and just baked it in the bread machine because, well, I am lazy :D I did make a few changes, but they weren't major. I only had light brown sugar, so I used that instead of dark (though I do want to try it with the dark at some point!). I used unsweetened applesauce instead of the oil. My vanilla extract is a double-strength one, but I still used the full 1.5 teaspoons. I had fresh ground coriander from last year's garden, so that was really nice. It smelled DIVINE as it was baking! I used bread flour, and while it was kneading, it seemed a bit on the sticky side, so I threw in a little bit of whole wheat flour (probably about 1/8 cup at most). GREAT texture, very slightly chewy (in a good way), rose and baked up nicely in the machine. We had it toasted for breakfast this morning. Will definitely be making this again, and will try it with dark brown sugar!

Cinnamon Bread II

After reading the reviews that said this bread wasn't quite sweet enough on its own, I changed some things, and I thought it was a wonderful loaf! For one, I used a lot more cinnamon than it called for (I didn't measure, though, so I don't know how much). I also used the 1/4c sugar AND 1/4c Splenda to make it a bit sweeter. I used applesauce (unsweetened) instead of the margarine. GREAT texture, wonderful aroma and flavor. I will definitely make this again :)

Whole Wheat Honey Bread

This was only the second, entirely whole wheat loaf I have made in the bread machine that *wasn't* a doorstop. What a wonderful texture and flavor! I made this tonight, and 2 hours later there is so little left that I will need to make more tomorrow! I didn't have any shortening, and we're trying to eat a little healthier anyway, so I used applesauce in its place, same amount. I was a bit worried about the substitution, but it turned out absolutely fabulous. I used the whole wheat, medium crust, large loaf (for my bread machine, apparently 1.5 lb is a large loaf) settings, which ended up being a total of 3 hr 55 min, and it was perfect. Definitely a keeper in this household!
