Crispy Fried Fish

Reviewed: May 4, 2014
This is by far the best fried fish recipe we have ever had! I read the reviews and decided to do what I normally do when I make "Crunchy Chicken" ... so I patted off the fish fillets (walleye) - and then coated them with flour. When you do this it creates a smooth surface on the fish. Then when you dip them in the batter, do it quickly and let drip for about half a minute before coating in the Cornflakes mixture. I fried my fish at 325 degrees with a tablespoon of butter in the vegetable oil. The lower temp prevents smoking and burning of the fish. Turned out crunchy, flaky, tender, and very mouth watering. Recommend this to everyone! Delicious!

Grandma's Green Bean Casserole

Reviewed: Dec. 3, 2013
Delicious - this recipe is so wonderful and addicting. You have been warned! I sautéed the onions and didn't use as much flour (only about 1/4 Tbsp.) It turned out fantastic! I highly recommend EVERYONE to try this! No leftovers!

Fresh Tomato Basil Sauce

Reviewed: Sep. 3, 2012
I have continued to make this sauce for a couple years now. Today I used 8 small cherry tomatoes, fresh onion and garlic, extra virgin olive oil, thyme, dill weed, salt, pepper, basil, and butter - this was amazing on just regular spagetti noodles. This recipe is so easy to modify but never is disappointing!!!! It would be hard to mess this up!

Toscana Soup

Reviewed: Sep. 4, 2011
Will definitely be sharing this recipe with my family! I did a few changes, but overall this recipe is phenominal. The changes I made: I used 1 pkg. of Johnsonville Hot Italian Sausage brots and cut them into slices and instead of using any water - I used 3 cups of Swanson's Chicken broth, and definitely double the potatoes! At the end, I mixed 1 Tbsp. with 1/2 Tbsp. of cold Swanson's Chicken Broth to thicken it a bit. Also added the kale at the very end, turned off the burner and added the heavy cream and served with garlic bread and salad - very very great!!!

Chicken Noodle Casserole I

Reviewed: Feb. 3, 2011
Amazing recipe thank you. I only used one chicken breast and seasoned with salt, pepper, thyme, and italian seasoning. Used 1 can of cream of mushroom and 1/2 cup of sour cream. 2.5 cups of wide egg noodles and 2 Tbsp. of small cut broccoli. But the topping I made was the best - I used 10 Ritz crackers, 8 croutons, 1/8 cup of chicken Stoved Top stuffing, and about 5 french onions all crushed up finely. Truly fabulous recipe! Even better the next day!

Spiced Pumpkin Seeds

Reviewed: Oct. 30, 2010
Can someone tell me how to stop eating these? I used real butter - and instead of garlic salt, used a garlic bread/cheese sprinkle and doubled the amount of salt, kept everything else the same- these are amazing! Only took 35 MINUTES TO COOK!! I stirred them every 10 minutes to make sure they were doing okay and they cooked evenly in color. Thanks Carolyn - you also have a beautiful name :)

Old Fashioned Onion Rings

Reviewed: Aug. 22, 2010
These are fabulous onion rings - just like the A & W Drive-thru! A great idea for dipping sauce is 1/4 cup mayo, 1 Tbsp. prepared mustard, 1 Tbsp. Honey, and 1/2 Tbsp. of Lemon juice. Mix well - serve dipping sauce cold or room temperature. Goes great with the rings!

Kathy's Delicious Whole Slow Cooker Chicken

Reviewed: Aug. 9, 2010
Wonderful recipe! Made a 6 lb. chicken. I seasoned the inside cavity with regualr salt and rubbed olive oil on the entire bird, used 1 can Swanson's chicken broth, used only 1/4 olive oil for the juice, used regular vinegar and no sesame oil. For the best seasoning: use McCormick's Lemon Pepper seasoning - just lightly shake on top of chicken and add 4-5 dries basil leaves, 1/2 tsp. onion powder (to juice mix), and 1 tsp. dried celery! Cooked on low for 9 hours. Perfect and great gravy too :) served with wild rice! Added a picture as well. Thanks Kathy!

Italian Spaghetti Sauce with Meatballs

Reviewed: Jul. 9, 2010
This is an amazing recipe! I already have an awesome meatball recipe, but this sauce is to die for! It has a nice sweet flavoring to it. I used whole tomatos and thru the cooking process the tomatos become soft enough to break up into small chunks with a utensil as soft as a spatula! Phenominal. A new family favorite - thank you for sharing! --only used 1/2 the tomato paste called for, but you can add to your liking for thickness as you go. Will add a picture soon :)

Hamburger Potato Casserole

Reviewed: May 17, 2010
I added additional seasonings to this casserole and I used Simply Shredded Potatoes (1 bag). It turned out great - added a spoonful of sour cream on top for even more flavor. The only reason I didn't give the recipe 5 stars is because without the additional seasonings this would be very bland (for our tastes that is.) I also made a side of wild rice which accompanied this dish perfectly. I would recommend making this - just make sure to saute your onions, mushrooms, and garlic. Add some dill weed and thyme. Very good. I added a picture for all to see! Thanks.

Skillet Bow Tie Lasagna

Reviewed: May 6, 2010
This recipe is a keeper!! To add more flavor I used 1 can of stewed tomatoes (instead of diced), 1/2 c. ketchup (instead of tomato paste), 1/2 Tbsp. thyme, 1/4 Tbsp. dill weed, and when frying hamburger add 2 Tbsp. worcestershire sauce, 1 Tbsp. Orrington Farms Beef Bullion, and 1/2 c. green onion. Used Riccotta cheese instead of cottage cheese. Very amazing; even though I changed it quite a bit. Posted a picture for all to see.
