Sausage Egg Casserole

This was delicious. Although I did modify the recipe with the help of other reviews I'm still giving it 5 stars. I halved the recipe using 1 1/2 cups egg beaters (equals 6 eggs), still used roughly 3/4 pound hot Italian sausage (we like spicy!), omitted the mushrooms and added 1/2 red pepper, three green onions, 1 4 oz can green chili peppers, 1/2 cup cottage cheese and 1 cup pepper jack cheese. The cheese amounts to half of what the adjusted serving suggested. I used no butter at all and omitted the flour mixture. I ended up baking it for 1 hr. We didn't miss any cheese or notice the egg beaters. Ill definitely make this again.

Chicken Scampi II

I was really surprised at how easy and tasty this dish was. I used half of the butter as well as half of the olive oil, and believe I could have afforded to use even less butter. I used fresh parsley and like other reviewers added white wine as well as frozen mixed peppers ( was all I had) and mushrooms. Delicious and light.

World's Best Lasagna

Delicious!! I followed other reviewers advice and did not add in any salt at all. I used 16 ounces sliced mozzarella and ended up adding in additional shredded mozzarella to help disperse it more evenly. I also increased the amount of fresh basal and parsley. Will definitely use this recipe every time I make lasagna.

Roasted Potatoes with Greens

This was a great side dish, easy and very good. Next time I would use less rosemary as it can be overpowering and a lot more spinach. I used 2 cups and still could have afforded to use more.
