Delicious Ham and Potato Soup

Amazingly easy and delicious soup! For a variation, after making the white sauce and removing from the heat, I stirred in shredded cheddar cheese. So good with the ham and potatoes!

Foil-Baked Chicken

The taste of this chicken was really wonderful, but the texture was a little strange. The chicken is very tender in the packet and the sauce thickens quite a bit around it. It made it a little gooey, but otherwise delicious. I served this over rice and I think it would be great with some stir-fried veggies and toasted cashews!

Crunchy Romaine Strawberry Salad

This is a delicious salad. I had some grilled chicken breast that I wanted to use up, and it combined very nicely by just shredding a couple of cups and stirring in before adding the dressing. My whole family really enjoyed it!

Sophie's Zucchini Bread

Delicious recipe! I made two batches: The first I made exactly as the recipe states, and the second I substituted 1 cup of whole wheat flour for 1 cup of all-purpose flour, and I used a cup of pureed jarred pears for the oil. Just as delicious and a little healthier. I will be making this recipe all summer as my zucchini ripen up!

Teriyaki Marinade

Amazingly good! Like others, I substituted brown sugar for the white and thickened my leftover sauce with cornstarch on the stove. I grilled marinated chicken, then served it over rice and steamed veggies with the thickened sauce to make really great teriyaki chicken bowls.

Delicious Stuffed Potato Pancakes

These were good, but a little bland. I agree with one reviewer that sausage would be wonderful! I drizzled mine with a little gravy and my hubby and I both liked them better that way. The hamburger does not need to be cooked first since it is only 2 teaspoons spread thinly on each pancake. 7 minutes is plenty of time to thoroughly cook it. BTW, for all of you who are leaving one star with comments that you haven't even tried the recipe yet, you should know that this is where you review a recipe, not make comments or ask questions. You're bringing down the average review rating when you do this.

Tomato Pie II

This is sooo delicious! I used fresh tomatoes from the garden, which I'm sure helped the flavor. I also used fresh basil, chopped and sprinkled in the pie, instead of the dried basil. The cheese and mayo topping may seem strange, but they give the pie a delicious creamy/tangy sauce. Well worth making.
