About this Cook
I'm a hands on creative mum of 3 children and 1 teenager. I don't shop at grocery stores, I walk to local butcher for meat, and green grocer for produce. I stop and chat with people when I shop. I'm now growing my own veggies. I bake & cook ALL of my children's foods, even their snacks. No pre packaged junk in our home other than sweeties...I don't really fiddle with making candy but I will.....when I find time
My favorite things to cook
Bread. my hobby is making bread. and english muffins, biscuits, pizza. I like edible wild foods as well and experimenting with unusual ingredients. I cook soups a lot because it is healthy and saves much money to turn bits and pieces in the fridge that normally get thrown out in to yummy soups. our cupboard is filled to the brim with all sorts of exotic spices. in summer I will grill a lot of marinated meats and aubergines and mushrooms. yum, I'm hungry
My favorite family cooking traditions
Gumbo, Red Beans & Rice, Jambalaya, Boiled Crawfish, Fried Shrimp Poboys...yum. I grew up with in a Cajun household and also on a 10-acre farm. Food was celebrated and it was 'slow. Meaning you usually spent all year growing or rearing it before cooking it. You even gave it pet names usually. I enjoy ''poor mans foods'' though I eat very healthy now so I modify everything to be much less fattening but still tastes incredible
My cooking triumphs
Chicken & Andouille Gumbo. Bread (I made incredible bread). Lamb Kebabs served with fresh homemade pita bread. Sticky Toffee Pudding (yum, but don't eat it often). Banoffi Pie. Nutella Crepes. Maverick Grits. Garlic Baked Chicken. Salmond pockets with curried mango. (I'll insert more here later..too many to list)
My cooking tragedies
hmmm...too many to list here as well. I think when I accidentally added 1/2 cup vanilla to some divinity versus 1/2 teaspoon, that was ick. oh, and the pralines that melted the spoon and kitchen counter was disastrous. I use to be awful cook, was even banned from kitchens, but now my kitchen loves me.

Mama D's Italian Bread
Incredible recipe! I bake bread daily, always looking for new recipes to try, and this one is a keeper. Only thing I did differently is I omit the sugar as I don't like sugar in my bread.

French Bread
My family are enjoying a loaf of this delicious bread right now, after we all enjoyed the first nibbles when it came out of the oven. I must admit, I tried this recipe last year and it was too dense for our liking. My husband recently bought me 'French Bread Flour' and WOW what a difference the flour makes. The bread is perfect. I took others suggestions to cut the slits in the dough before the 2nd rise, and I never cover my bread with cling film when it's rising....I just spray it with a light coating of oil. This way I don't have the troubles of deflated dense bread.

Absolutely the Best Chocolate Chip Cookies
Great cookie recipe! The ONLY thing I did differently, and was ONLY because I was trying to salvage a 'recipe gone wrong', is that instead of using JUST flour, I ground up the caramel popcorn I had 'TRIED' making (what didn't burn, I put too much salt on....blech), and I used 1/2 Flour and 1/2 Ground Up Caramel Popcorn Flour. I made sure to use unsalted real butter, so it offset the salt in my popcorn flour. Well, my children who were soooo disappointed by that awful caramel popcorn I made, were SO THRILLED with these cookies!
