Double Chocolate Banana Muffins

Good...just a hair bland...next time I will add a little more salt perhaps? I used 1/3 cup oil and 1/3 cup applesauce and added walnuts since I didn't have a full cup of chocolate chips. This actually filled a 12 count normal sized muffin tin and a 12 count mini muffin tin. I baked at 400 degress for 13 minutes for the large and 8 minutes for the mini tins. But I think 425 would have been just fine too!

Sloppy Joes II

Good....I had to add about a 1/2 cup water to the recipe because it was too thick to simmer. It is pretty basic, but I guess that is what sloppy joes are meant to be. I would recommend adding extra onion and green pepper if you like it a little more chunky and flavorful.

Grilled Filet Mignon with Gorgonzola Cream Sauce

I made the recipe as is. The key to the sauce is using a wide-bottomed pan....more surface area for the heavy cream to evaporate. I started with a smaller pan and it was taking forever (like other reviews said). As soon as I switched to a large pan it reduced by half quickly! Make sure you really like gorgonzola cheese before you make it. The sauce was very strong. I only used about 1/4 of the sauce on our fillets and it was plenty!

Lemon Raspberry Jumbo Muffins

Great! I followed it perfectly except I used frozen blueberries instead and they turned out wonderfully. They cooked in the exact amount of time listed. Thanks for a good recipe!

Spiedies

Wonderful!! I had never had a spiedie before but my husband wanted me to make them for him. This is the first recipe I tried and the only ingredient change I made was to use onion powder instead of the mint. My husband tried a bite and said..."this is exactly what they should taste like". Score!! He likes to have a little juice with his meat, so instead of grilling I sauted the chicken in my wok with a little extra sauce. It worked just fine! I also cut the meat small and it only sat for 5 hours. It flavored the meat well in that short of time although next time I will definitely use a full day!

Chocolate Chocolate Chip Cookies II

Wonderful. I just added 1/2 tsp salt and only 1/3 cup cocoa powder. I was afraid it would be a little too rich with all of it. I also used 1/3 cup canola oil abd 1/2 cup butter instead of 1 cup of butter...like I do in all my recipes. My husband prefers the consistency that this creates better. They are a little softer and puffier. I also only cook them for 7 minutes at 375 degrees. But over all, they were delicious!!

Cheesy Catfish

Delicious meal. I did use about half seasoned bread crumbs and half flour. I also sprinkled some salt and pepper on the fish before following the other steps. Big mistake! The recipe was fine as it was...unless you like a LOT of salt. I used only 6 (4oz each) fillets and they ended up baking for 30 minutes at 375 degrees. I didn't need to broil them...they were crisp enough as is. Even my non-fish loving husband was impressed with the meal.

Chocolate Mousse Cake IV

Good cake, although since I normally bake from scratch, I could definitely tell that it wasn't totally homemade. I followed recipe with only the two most recommended changes (adding cream of tarter to the whipcream and reducing the water to 1/4 cup). The mousse turned out just fine. I used it for the filling, but folded in a bit more whipping cream for the frosting so it wasn't quite as rich. I enjoyed it, but I will probably look for a different recipe next time.

Better Than Sex Cake II

Very good. I used a yellow cake mix instead....seemed to be a better mix with the caramel. I liked the amount of caramel topping and condensed milk that is listed and didn't double it like other reviews. It was the perfect richness by itself. The secret is letting it chill....it grows more moist the longer it sits.

Easy Slow Cooker Chicken

Maybe I would leave out the the celery soup?? I also used instant rice because of all the reviews that regular rice didn't cook. But the instant rice was just mushy. The chicken was cooked but not flavorful for tender. Won't make it again.

Angela's Awesome Enchiladas

For those of you wondering how much shredded chicken 2lbs is, here's the answer. I always poach (very soft boil) quite a bit of chicken at a time to freeze for the future. But it makes it hard to figure out what you need for a recipe! For this recipe, you will need 3 1/2 cups of loose shredded chicken to equal the 2lbs needed. If you chop it up small it will only be about 3 cups.

Garlic Angel Hair Pasta

Delicious! I followed the reviews to add some olive oil to keep it moist and I used parsley instead of chives. It was wonderful. A mild yet flavorful side. I served it with baked fish. Even my husband who cringed when I told him what was for dinner admitted this was a whole lot better than he thought it would be. That's pretty good!

Easy Lemon Cheesecake

After reading reviews I decided to make this recipe. The only adjustment I made was to add a bit more creamcheese and a splash of lemon juice. I had a huge problem getting the creamcheese to melt (it stayed as little lumps throughout the pudding). I stirred it (over low heat...gently simmering) for probably at least 15-20 minutes before I gave up and dumped the mixture into a bowl and beat it with an electric mixer until the creamcheese was more disolved. It still never got perfectly smooth. I poured it into the crust and it set and had wonderful flavor, but was slightly lumpy. I plan on trying this again and pre-softening/melting the creamcheese in the microwave prior to adding it to the pudding to see if it helps.

Bahamian Style Peas and Rice

This recipe is pretty close to what I ate while I lived in Nassau. It is definitely missing the minced green pepper and it has more tomato flavor than normal. I'd cut out the ketchup and tomato and just do the tomato paste. But other than that it is a good recipe.
