Honey Roasted Red Potatoes

GREAT recipe! I baked for nearly an hour, however & it was great. I added parsley flakes. Next time I'll use olive oil instead of butter to make it more "heart healthy." This is a recipe that you could add whatever spices/herbs you like & it wouldn't harm the integrety of it.

Kentucky Bourbon Sweet Potatoes

This is the absolute BEST (and easiest) recipe for sweet potatoes I've found. I substituted brown sugar for the white & ended up having to bake it a bit longer. It was a HUGE hit, a MUST try even if you THINK you don't like sweet potatoes!

Key West Chicken

Made this exactly as listed (I marinated it all day)& it was absolutely the BEST, most moist & flavorful chicken I've ever grilled. It was a HUGE hit with everyone at the table. Next time I'll grill additional chicken so there's leftovers, it'd make KILLER chicken sandwiches!

Pumpkin Fluff Dip

A HUGE hit for carry-ins. I fixed it for my husband to take to work last Fall & this year they specifically asked that he bring it in again. I must've sent the recipe to a dozen people that requested it. It's SUPER easy, really tasty, and a nice touch during the Fall season. I served it with Vanilla wafers and Gingersnaps. If you want to lighten it a bit, use fatfree Cool Whip & sugarfree pudding.

Fancy Potatoes

Wonderful easy! I didn't have garlic salt so I added about 2 tsp of dry buttermilk ranch dressing mix. FANTASTIC! I made these up early for company then just popped them in the oven in time for the rest of the meal. I would DEFINITELY fix these again!

Chocolate Cherry Biscotti

Prepared this as noted with exception I used dried cherries instead of candied. Also when I make biscotti, I like to totally dip the top in either white or dark chocolate & then take the opposite color chocolate and melt it down with a bit of oil and then take a fork and drip lines across it. Gives it an extra special appearance. With this batch, I made half the batch in dark chocolate with white stripes and the other half batch in white chocolate with dark stripes.

Aussie Chicken

A good & easy recipe for chicken, something I get tired of trying to find new ways to jazz up. I didn't have the dried minced onions so instead I used onion & garlic powders. An easy, tasty, and eye appealing dish!

Hungarian Mushroom Soup

OHMIGOSH, this was one of the BEST soups I've ever fixed! Plus it was easy, always a plus in my book. I added some roast garlic & put my immersion blender in it to puree some of it for a creamier soup. It's a recipe I fix again & again, and pass on to anyone I know that likes mushrooms. It's as good as ANY I've had in restaurants.

Aunt Janet's Pumpkin Dump Cake

A HUGE hit each time I make it & take it somewhere (I can't make it just for home becaused we can't leave it alone!) One thing I changed, instead of using all the different spices I simply used 4 tsp pumpkin pie spice.

Cathy's Creamy Chicken Bake

Even my picky husband claimed this was a "good dinner" BUT I think changing the Swiss cheese to a Habanero Cheddar did the trick in spicing it up. Also used chicken brother instead of the wine and cornbread stuffing mix for the bread crumbs. I would definitely fix again this way. (Note: I reduced recipe down to serve 2)

Broccoli and Cheese Brunch Casserole

Great recipe! Instead of the roma tomatoes I decorated the top with red, yellow, orange, & green pepper rings. Also, used spicy sausage and mexican cheese instead of cheddar. Had a nice mixed greens salad on the side for a tasty dinner but would also fix for breakfast or brunch. (I halved the recipe with no problems)

Cha Cha's White Chicken Chili

Fabulous soup but WAAAAAY to much jalapenos! 4 oz is a LOT! We like spicy food but next time I'll cut the jalapenos in half. This will be a staple on our cold weather meals list.

South Beach Salad

A nice change of pace from our regular dinner salad. I just marinated the veggies in the dressing and placed them on organic baby romaine. Didn't have enough fresh red peppers so I used the jarred roasted red peppers.

Burgundy Pork Tenderloin

Wow, a simple & impressive lowfat entree! I used a cabernet for the wine and found I had to cook longer than stated. I'm sure roasting time depends on thickeness of roast. Use a thermometer & just make sure it's 160 degrees and you're good to go. The smell while it was cooking was incredible, could hardly wait for it to come out of the oven. I also added some mushrooms, which are fabulous with the cab & onions.

The worst recipe I've tried so far. No redeeming factors whatsoever. Used garlic instead of garlic salt & still WAAAAAY too salty. Sorry, but I followed everything to a "T", but no good.

Maple Salmon

Oh my gosh, what a FABULOUS & easy recipe! Per other reviews I omitted the garlic salt & basted it a few times during baking. I will DEFINITELY make this again, as good as any salmon dish I've had out. And remember, if you're going to eat salmon, make it WILD (not Atlantic, it's a tricky name for farmed raised salmon)

Butternut Squash Soup

Wow! Super easy, fast and oh so yummy! Better than any I've had at restaurants. Made just as recipe with exception of used only HALF the margarine (Smart Balance Light), reduced fat Cream Cheese, and added a dash more cayenne. Followed other's advice & just halved squash, removed seed, put in a shallow dish with a bit of water, covered with plastic wrap & cooked in microwave. Then simply scoop flesh out from skin. I used my FAVORITE kitchen tool, my immersion blender & simply pureed it in the pan I cooked it in. Will be a "regular" on my menu rotation. Thanks for submitting it!

Simple Swiss Chard

My first time fixing swiss chard (I used rainbow chard). Was a bit blah (other than too vinegary) so I added some pine nuts. Next time I'll cut the vinegar and I'm sure it'll be better.
