Ken's Kickin' Posole
WOWEE WOW WOW!! After moving to the southwest this summer I knew once it cooled down a bit I wanted to try posole. So far I haven't seen it on any menus so I thought I'd make some of my own and I'm SOOOO glad I did, this recipe was E X C E L L E N T !! I prepared it just as written except once I had all the components finished I put them into a LARGE CrocPot and let it cook on low all day. I shared it with neighbors who have lived in the SW for 30 years and they also said it was the best they'd had. I have a feeling I'll be making this regularly during the "cool" weather ahead. THANK YOU SO MUCH KEN for posting your recipe!!

Creamy Roasted Parsnip Soup
4.5 stars.....really good! I wanted to try parsnips as I've never had them and this was a GREAT recipe to try. Has a bit of a bite of heat at the end so you may want to add a drizzle of some heavy cream onto the top of each bowl before serving, it'll help tame the heat a bit. If all parsnips are this good, count me in!

Slow-Cooker Chicken Tortilla Soup
I LOVE slow cooker recipes for many reasons and this one was no exception. I used all chicken broth instead of water and had some roasted Hatch chiles in the freezer so diced those and used in place of the canned green chiles. I fixed this for company a week ago and am planning on using the recipe again this week for some other company. SO much easier entertaining when the work is done, kitchen is cleaned up and dinner is waiting in the slow cooker!
