Cream Cheese Frosting II

Perfect, absolutely PERFECT!! This is exactly what cream cheese frosting is supposed to be! I used it for my pumpkin muffins and it was a match made in heaven!

Apple Peanut Spinach Salad

5 stars all the way!!! So easy and so delicious!!! Exactly what I was looking for!! I brought it to a BBQ and everyone there raved about it, even my husband who hates curry! As suggested, I substituted cranberries for raisins and apple butter for chutney. This is my new favorite salad!!

Taco Seasoning I

I use this on EVERYTHING. It's great for "traditional" tacos. But I also use it in stir-frys and as a rub for almost anything I grill!!

Italian Summer Squash Polenta Bake

I also made my own polenta for this recipe. It was FANTASTIC!! My brother, who is a chef, was very impressed and suggested I make it for our family reunion. I have made it twice and it was gone within hours!!

This was amazing! I never made polenta before and this was so easy and delicious! I used Locatelli Pecorino Romano cheese instead of Parmesan, for extra flavor.

Addictive Pumpkin Muffins

I have made these many times, we just love them! I actually make loaves and mini loaves out of the mixture, instead of muffins- in that case they need to bake 50-40 minutes. I give them away to people as gifts, as well! I change a few things: I use whole wheat flour, 2 cups white and 2/3 cup brown sugar, I use the whole can of pumpkin for more moisture, and instead of walnuts I use 4-8 tbsp flax seeds. Very nutty and healthier!

Best Brownies

These brownies were so good, we made 3 batches in one week! I underbake them by at least 10 minutes and add a little extra butter and cocoa because we like them really chocolatey and really gooey!

Eggplant Au Gratin

I used to think I disliked eggplant... until now!! What a wonderful recipe! I will definitely be making this again soon. I didn't have 10 oz ramekins so I used a casserole dish and it turned out perfect!
