Apple Brownies

Reviewed: Apr. 17, 2013
I gave this a 3-Star rating on it's misrepresentation of being a "brownie" recipe. It is a cake, and I might add --- a very moist, tasty cake. It would never make it as a brownie. I made it for a children's bake sale where the children would purchase a brownie to eat for $0.50 as a fund-raiser. They couldn't keep the so-called "apple brownie" together long enough to eat it because of crumbling due to its moistness. The recipe makes a wonderful cake to be served on a plate and eaten with a fork which the children didn't have at the fund-raiser. I will be making this recipe again, but only to serve as a cake.

Paska Bread

Reviewed: Apr. 3, 2012
I have been making this Easter bread since the 1970's. It has become a tradition. Everyone asks for it before Easter and they love it. I have a heavy-duty Kitchen Aide mixer, but mix up half a recipe at a time and only "knead" it in the Kitchen Aide until the dough follows the bread blade around the bowl. I always finish by hand kneading method to prevent my mixer from overheating. This recipe always turns out great. It is fool proof if you follow the directions. Also, mixing up only half a recipe at a time makes the hand kneading easier.

Peach Upside-Down Cake

Reviewed: Sep. 8, 2011
Oh my goodness! Thank you so much, Terri, for the wonderful recipe. I think those reviewers that change things out from the original recipe are not fair when they give a low rating. I did change a couple of things: I substituted quick oats for the amount of coconut because I don't care for coconut. Also, I doubled the cake ingredients and added 1 teaspoon ground cinnamon. I baked it in a soneware bundt pan for 50 minutes at 350 degrees. It was a smash hit at my ladies meeting, and I believe your recipe in its original form still deserves 5 stars! I would give it more if I could.

Scalloped Potato-Onion Bake

Reviewed: Aug. 1, 2011
I made this exactly as directed. Taste was good, but the whole thing needed more liquid. Next time, I'll use two cans condensed Cream of Celery Soup and 3/4 cup milk. Hopefully, that will do it. Or maybe, just the one can of soup with 3/4 cup milk.

Microwave Popcorn

It blew up my microwave! Don't try this in yours. Tough popcorn on top of losing my microwave.

Vanilla - Chocolate Powdered Sugar Frosting

Reviewed: Jun. 24, 2011
Does this ever take me back to my childhood! Once a week in my teens, I got to bake a cake (it was a reward thing). This was the only frosting I ever used because back then there wasn't any canned frosting available at the grocery stores. The cake flavor determined whether I made the vanilla or the chocolate version of this frosting. I'm going to bake a cake right now and whip up some of this memorable frosting. Thank you for posting this tried and true recipe.

Creamed Eggs on Toast

Reviewed: Apr. 26, 2011
I have had this recipe since childhood (back in the 1950's). The only thing different was serving it over broken up Saltene Crackers instead of toast. It is delicious! Easy meatless entree.

Apple Dumplings I

Reviewed: Feb. 9, 2011
I've been making these for years. Everyone loves them. Only difference is that I pour the "sauce" around the dumplings and not over them. I also, sprinkle the tops of the dumplings with a cinnamon sugar mixture like you would sprinkle on cinnamon toast.

Home-Fried Potatoes

Reviewed: Apr. 15, 2010
This is the greatest way to fix fried potatoes for a crowd --- like 16-20! I merely increased the amounts (by a lot) and sliced up the spuds BEFORE boiling. Everyone loved them.
