Apple Coffee Cake

This is one of the best apple cakes I have ever had. I made it twice last week! The cake is so moist thanks to the yogurt and sour cream, and I love that it isn't overly sweet. The apple flavor really comes through. Most apple cakes I have had are crumbly, but this one really holds together, enough that you can even cut it into bars and eat it as a finger food.

Black Bean, Corn and Red Pepper Salsa

Authentic, No Shortcuts, Louisiana Red Beans and Rice

I have been looking for a real red beans and rice recipe ever since I visited New Orleans a couple months ago. This is the closest I have found to what I had there. I liked it much more the second day. Next time I will make it a day before I want to eat it. I also had to add more spice (cayenne pepper) to get the heat my family likes. Other than that, this is an excellent recipe that I will definitely make again!

Chili-Lime Chicken Kabobs

These kabobs had a wonderful taste. I marinated them all afternoon, and they were very tender. They also have a pretty color after they are grilled, making a pleasing presentation.

Spicy Garlic Lime Chicken

I didn't have any chicken in the freezer, so I used boneless pork tenderloins instead. My husband and I loved it! It made beautiful, golden brown pork chops. A hint when using with pork: omit the salt.
