Dishpan Cookies II

I made half a batch and cut down to 1.5 sticks of margarine. That was more than sufficient. The cornflakes do add a somewhat "chewy" texture I'm not sure I like. Next time I would definitely crunch up some chex instead. And I measured the corn flakes before crunching them up. That was more than enough. I also used 1/2 cup brown sugar and 1/4 cup splenda brown sugar blend. They're good but like I said, def sub the corn flakes. I don't think there's any reason to use real butter. Non-hydrogenated margarine was fine.

Barley Bake

Awesome. I was confused about whether to cover it or uncover it... so I covered for the first 3/4 of the time and uncovered for the last 1/4. It was pretty soupy still but it tasted great and after it set for a little, most of the liquid absorbed. I cut the butter down a lot. It's not necessary. And I suggest using low sodium chix broth. I also subbed basil instead of parsley which was excellent.

Jif® Peanut Butter Fudge

Maybe it was because I used full fat, crunchy peanut butter, but this was not great. It was super greasy and never really hardened. It was hard enough to cut up and serve but still mushy. I would definitely have used less butter if I had known how greasy it would turn out.

Magic Cookie Bars II

Oh my GOD these are good. Although the recipe should call for 1 1/4 C of sweetened condensed milk, not 1 1/3. One can is 1 1/4. I didn't add more by opening another can. Otherwise this is AWESSSOOMEE. I had to give them all away so I wouldn't eat them.

Wheat Crackers

they were a lot of work...the dough was greasy... and they were kind of chewy unless you got them reeeeaaallly thin. if i had a pasta machine i would've used that to get the dough super thin. i'd make them again but make some adjustments next time.

White Bean Dip with Pine Nuts

I didn't add the tomato because it seemed like a weird addition and would make the dip spoil a lot faster. I used less garlic than called for and it was still way too garlicy (and I'm a garlic person). I used less oil, and more water to be healthy. I would salt it after it's set for a day. Next time I think I'll add parmesan cheese and more basil. Overall it's really good, especially spread on a wrap with cucumbers and feta.

Turkey and Quinoa Meatloaf

I subbed soy sauce for Worc. bc I didn't have any. The "rub" for the top didn't go well. I'm not sure if it was my fault or the recipe. Would be better with your own concoction of ketchup/brown sugar/soy sauce added at the end. The onions were a bit chunky if you aren't an onion person. I'd recommend grating the onion next time. The quinoa was a nice change to regular meatloaf. I'd definitely make this again with a different topping next time. Great leftovers.

Lighter Snickerdoodles

Overall really good recipe. I made some changes: just used 2 eggs instead of dealing with the 1 egg+ 2 egg whites; substituted 1/4 cup of brown sugar for 1/4 cup of the white; baked them at 380 for 10-14 mins (although next time I will just do 400 because I dont think they ever were going to burn). I didn't find the dough too sticky to deal with but you have to refrigerate it first for a few hours and stick it back in the fridge between batches. Everyone I've given them to really likes them. I would give them 5 stars but the second batch came out so different from the first even though I did nothing to the dough in between. Must have been the difference between putting them on a hot pan v. a cool one? Who knows. But I would recommend it.

Asparagus and Mozzarella Stuffed Chicken Breasts

This is a good recipe as long as you do something to make up for the dryness of the chicken. I read the other reviews and decided to spread pesto on the inside and outside of the chicken. I pounded out the chicken and then brushed pesto on it before rolling and then brushed pesto on the outside before sprinkling on the breadcrumbs. I went a little too easy on the cheese on the inside and would probably add more next time since most of it tends to melt out the sides (which makes for great crispy cheesy goodness if you use a spatula).

Greek Orzo Salad

Amazing. I made it for my coworkers and everyone loved it. I used yellow and red tomatoes marinaded in olive oil, basil and parm cheese overnight then diced them the next day. I also used artichoke hearts in just water, omitted the parsley and put in fresh basil. I drizzled just the smallest amount of the absolutely fabulous greek dressing from this site but it really didnt need a lot. a tablespoon or two is enough. I didnt use any oregano or lemon pepper either. It is plenty flavorful. Really tasty!
