Dishpan Cookies II
I made half a batch and cut down to 1.5 sticks of margarine. That was more than sufficient. The cornflakes do add a somewhat "chewy" texture I'm not sure I like. Next time I would definitely crunch up some chex instead. And I measured the corn flakes before crunching them up. That was more than enough. I also used 1/2 cup brown sugar and 1/4 cup splenda brown sugar blend. They're good but like I said, def sub the corn flakes. I don't think there's any reason to use real butter. Non-hydrogenated margarine was fine.

Barley Bake
Awesome. I was confused about whether to cover it or uncover it... so I covered for the first 3/4 of the time and uncovered for the last 1/4. It was pretty soupy still but it tasted great and after it set for a little, most of the liquid absorbed. I cut the butter down a lot. It's not necessary. And I suggest using low sodium chix broth. I also subbed basil instead of parsley which was excellent.

Jif(R) Peanut Butter Fudge
Maybe it was because I used full fat, crunchy peanut butter, but this was not great. It was super greasy and never really hardened. It was hard enough to cut up and serve but still mushy. I would definitely have used less butter if I had known how greasy it would turn out.
