Yummy! The only thing I did different was add 2tbsp of flour to the sauce. I also increased the parmesan cheese and omitted the green onions.

This is good. I make mine the same way, except I don't boil the potaotes beforehand. I chop the potatoes instead of slicing and I add beef broth to the pan, cover the pan and let it simmer for about 10 minutes. They turn out great everytime. Its good with shallots too!

This was okay. To be fair I did use double the amount of stewed tomatoes the recipe called for. I think I will try to put the mexican spin on it next time like the previous reveiwer did.

Mexican Spicy Bean Salad

This was good. The only thing I did different was omit the green pepper and added a bit more cilantro. Next time I will half the amount of oil and vinegar, it was more than enough. Very nutritious and colorful dish!

Mashed Potato Salad

Many moons ago the mom of a highschool friend made this for us. I still remember how good it was. I have been looking for the recipe for quite some time now. I think I've found it. It is best eaten at room temperature.
