Pumpkin Roll

I have been making this recipe for many many years, and have learned a few tricks that make it even easier- put waxed paper down on your cookie sheet and spray with pam before putting batter on it to bake. be sure to loosen edges after letting cool for a few minutes before rolling. Lastly, I always roll my finished pumpkin roll up in waxed paper and freeze it until I am ready to serve. It will last for up to a month in freezer when properly packaged. (After it is cut, it thaws rather quickly) It is much much easier to cut the roll after it has been frozen (I use a bread knife) Hope this is helpful!

Magic Peanut Butter Middles

These are fantastic! My family and I made them this evening. I used 1/2 Cup peanut butter in the cookie rather than 1/4 Cup, and added approx. 1 TBS of milk to keep it from being too dry. Also, important not to over bake. Very yummy!!

Chocolate-Coconut Jumbo Pie Cupcakes

This s a simple and great tasting recipe. My family loved the surprise of finding the pie crust. I also did a batch using peanut butter chips & Choc chips in the pie crust instead of coconut, & made a fluffy peanut butter frosting. They were awesome!

Easy Homemade Pie Crust

I have been baking for a very long time, & pie crusts always made me nervous and were hard to conquer. Until now that is! This recipe is very easy to work with- it rolls out beautifully without breaking apart. And it delicious. This will definitely be my go to recipe from here on out! I partially roll the crusts inside Saran wrap & then transfer to lightly floured surface. Easy as pie!

Downeast Maine Pumpkin Bread

This is a wonderful recipe. Pumpkin seeds are also really good in and on top of it! This bread freezes well. I make it as is, and it is just perfect.
