Double Tomato Bruschetta

I am living in China right now, so ingredients are scarce, but this bruschetta recipe was perfect, even without an oven! Instead of balsamic vinegar, I used some Kraft balsamic vingrette dressing, and about 1 tbsp of olive oil. No plum tomatoes, but sweet regular tomatoes worked fine. I found dried basil still brings out the flavour, but i had to add double the amount than the recipe asks. I toasted the bread instead of put it in the oven and sprinkled parmesan instead of baking it with cheese. It's still a delight though the recipe was simplified. My husband continues to ask for it as his hors d'oeuvre of choice.

Penne Pasta with Spinach and Bacon

I live in China right now and most of the recipes on this site are hard to make because I can't find the ingredients here. BUT, with this recipe I finally was able to find most of the ingredients (substituted canned tomatoes for cherry tomatoes), it was quick and easy to prepare and I had a meal in less than 1/2 hour! I also could not find penne pasta, so I substituted for spaghetti. Just as good. Thanks for this awesome recipe!

Amazing Pork Tenderloin in the Slow Cooker

Easy and delicious! The only comment - the wine taste overpowered the rest of the marinade. Instead of tenderloin, pork loin was on sale, so I used 4 lbs of pork loin. Doubled the water, wine and dry onion soup. Added 3 tbsp of worchestershire and added 1/2 can of beef brouillon. No soy sauce. Sliced inserted peices of garlic and inserted into the meat. Next time, I would reduce the wine and add the soy sauce to see if that helps with the overbearing wine taste.
