I am living in China right now, so ingredients are scarce, but this bruschetta recipe was perfect, even without an oven! Instead of balsamic vinegar, I used some Kraft balsamic vingrette dressing, and about 1 tbsp of olive oil. No plum tomatoes, but sweet regular tomatoes worked fine. I found dried basil still brings out the flavour, but i had to add double the amount than the recipe asks. I toasted the bread instead of put it in the oven and sprinkled parmesan instead of baking it with cheese. It's still a delight though the recipe was simplified. My husband continues to ask for it as his hors d'oeuvre of choice.
