Bread Machine Challah for Shabbat and Festivals

Reviewed: Jun. 30, 2010
I gave this recipe to my 10 year old daughter so she could bake challah for the family every Shabbat and have a recipe to call her own. This is the best tasting challah. She has followed the recipe exactly and it comes out great every time. She recently made this challah for another family and they were asking for the recipe. Thanks for sharing!

Sturdy Whipped Cream Frosting

Reviewed: Jun. 30, 2010
This is the recipe I have been searching for! I love the lightness of whipped frosting and the sturdiness of cream cheese frosting--this is the perfect marriage of the two. I used my trusty old electric hand mixer and made a lemon version for my son's lemon birthday cake by omitting the almond extract and adding the juice of half a lemon and about a teaspoon or so of dried lemon peel granules. I'll add more lemon juice next time as it was only lightly lemony. I actually halved the sugar and doubled the recipe and it came out perfect for our tastes. I generously frosted 2 9-in. stacked cakes (using it as the middle layer as well) and had some left over for cupcakes. It did hold up well sitting on the table in a warm kitchen and everyone raved that it was the best frosting they had ever eaten! This will be my standard frosting recipe from now on.

Cinnamon Rolls I

Reviewed: Oct. 14, 2011
I never made cinnamon rolls before trying this recipe. I've made these a few times now and they come out perfect every single time. The dough is very easy to handle right out of the bread machine and can be refrigerated overnight for a shortcut in the morning. When you use white bread flour, these come out very light and fluffy and uber delicious. With white wheat regular flour they are not as light and fluffy but still very delicious and, of course, healthier. We like them best fresh out of the oven with cream cheese icing. Sometimes we flavor our icing orange with orange peel and natural orange flavoring. I bake these in a 9x13 casserole dish and they are always gone in a flash!

In-a-Pinch Ketchup

Reviewed: Jun. 24, 2011
We have been using this recipe for several months now. I substitute lemon juice for the vinegar and honey for the corn syrup as we are sensitive to both. My children love it. Each recipe makes approximately one plastic condiment bottle--depending on how thick you like your ketchup.

Juicy Lucy Burgers

Reviewed: May 3, 2010
Made these last night on the grill and they were a HUGE hit. Our children usually eat the hotdogs and not hamburgers but they were fighting over these. Hubby raved also. Used Kraft Deli Deluxe American cheese between the patties (one slice cut into 4 squares for each burger) and will probably add more cheese next time. Excellent--thanks!

Creamy Italian Dressing II

Reviewed: Apr. 15, 2010
Perfect! I don't need to buy creamy dressings anymore. Followed some of the earlier suggestions and reduced the mayo (used miracle whip), added 1/4 c. sour cream, used 2T. lemon juice and left out the vinegar, and used 1 tsp. Frontier Italian Seasoning blend in place of the oregano and basil, then added a bit of dill. Super yummy!

Crispy Potato Pancakes

Reviewed: Sep. 13, 2011
This recipe was very simple and tasty. I multiplied to feed 6 and to save time I used a big bag of frozen hash browns (thawed). Cooked them on an electric griddle in palm oil shortening. We ate these with a choice of applesauce or sour cream. I will definitely make these again!

Dominican Style Oatmeal

Reviewed: Jun. 30, 2010
Thank you for this recipe! So simple and so delicious. It has revolutionized our oatmeal breakfasts. I use 2 T. of maple syrup instead of sugar, whole milk, and add a 15 oz. can of sliced peaches in pear juice (cut up into chunks) to make it peaches and cream oatmeal. Even my picky little eater loves it--YUMMY!!

Pineapple Chicken Tenders

Reviewed: Jul. 19, 2010
As a few others have noted, WAY too much soy sauce and not enough pineapple juice. I added some ginger to the marinade, added green and red peppers to the skewers along with pineapple chunks, marinated for 30 minutes and this was still very bland. I will not be making this again. I think the idea of chicken and pineapple is good but this recipe is missing a lot.

Cinnamon-Peach Cottage Cheese Pancakes

Reviewed: Jun. 30, 2010
Ok, I never thought anything with cottage cheese in it could be any good but I was wrong. These pancakes are truly moist and delicious. I'm giving it 4 stars simply because I've made them a few times now and they always come out very thin--almost crepe like and we found that they still needed butter and maple syrup. But oh, are they good. I substituted maple syrup for the sugar and used a 15 oz. can of sliced peaches in pear juice cut into chunks. The cottage cheese just melts away as they cook and makes the pancakes very moist.

Sour Cream Chocolate Cake

Reviewed: Jun. 30, 2010
I've made this cake a number of times and it is now my standard chocolate cake. As I usually do with all dessert recipes, I halved the sugar and it is perfect for our tastes. Comes out very moist provided you don't over bake it. Bake it for even a few minutes too long and it can be a bit dry. Keep a close eye on it and remove it as soon as the middle is done. Gets raves every time.

Crispy Rosemary Chicken and Fries

Reviewed: Jun. 30, 2010
I've made this four times so far and it is great. So simple and so tasty. I used bone-in, skin on thighs. Like other reviewers I decided to marinate the chicken and potatoes. Added the juice of half a lemon to the olive oil and spices, marinated for 1-2 hours, sprinkled everything liberally with herbed sea salt and baked for one hour. Crispy, tasty skins, tender meat and the potatoes are to die for!

Apricot Chicken

Reviewed: Jun. 28, 2010
This recipe is so easy and very delicious! My variations: worcestershire sauce instead of soy, and 1/4 c. of chicken broth instead of 1 T., and added an 8 oz. can of pineapple chunks, drained. I also used nitrate-free pre-cooked, pre-packaged chicken for the ultimate easy dish. Also added a pinch or two of finely ground flaxseed for some extra fiber. Served it over rice--so tasty. Everybody raved. This is now a staple dinner in our home!

Ice Cream Sandwich Dessert

Reviewed: Jul. 12, 2013
This cake garnered so much praise and was so easy to make! I made it for a birthday party and was able to assemble it as the party was starting. I made the caramel myself with butter, vanilla ice cream, a bit of brown sugar (for color) and fructose to lower the blood sugar impact of this cake. We omitted the peanuts. I sprinkled confetti candies on top for a pretty presentation and it was a hit!

Mom's Chocolate Chip Cookies

Reviewed: Jun. 30, 2010
As another reviewer noted, these cookies do have an aftertaste and did not come out as thick and chewy as I would have liked. They taste good enough and do stay moist when stored for a day or two but also were very fragile. Seems like this recipe just missed.

Baked Denver Omelet

Reviewed: Jul. 12, 2013
This was awesome! Followed the directions exactly using herbed sea salt to taste. My children who generally don't like eggs raved about this recipe--very tasty.

Toasted Pumpkin Seeds

Reviewed: Oct. 4, 2013
Simple and delicious! I can see that it might be a bit salty for some but the saltiness was part of why we thought this recipe was so good.

Absolutely Ultimate Potato Soup

Reviewed: Oct. 4, 2013
I made this soup as stated and was sure to use chicken stock and not broth. I did add about one teaspoon of seasoned salt at the very end and it was FANTASTIC. Thick and very filling. You can make it as thick or as thin as you like by blending more or less of the soup. As good as it was, next time I'll probably add a bay leaf while the potatoes are cooking and use less bacon. Time consuming? Yes, but oh so worth it!

Hot Artichoke and Spinach Dip II

Reviewed: Mar. 4, 2013
This dip was excellent! As other reviewers suggested I mixed the mozzarella in with everything else which was much better. I doubled the recipe and baked it in a 8x8 glass dish. Used part sour cream and part mayonnaise but I think next time I will just use mayonnaise as I could taste the sour cream a bit too much. I love sour cream, just not in my spinach artichoke dip, I guess. I also used jarred minced garlic and jarred marinated artichoke hearts for a bit more flavor. Cut the artichoke hearts up even further with kitchen scissors to make them more dip friendly. Baked at 375 instead of 350 for the same amount of time (it was pretty thick in the 8x8 pan). Served it for lunch with tortilla chips and parmesan garlic herb pita chips--the flavor of the pita chips complimented the dip VERY well. I will definitely make this again!
