Grilled Chicken with Peach Sauce

Everyone enjoyed this dish. Only changes were minor - doubled the recipe then added 1 Tbl of cider vinegar to marinade, next time I would purée the peach preserves so no peach chunks to slide off the chicken on to the grill, a little more soy (low sodium), finish the chicken then turn up grill for the peaches and cook less time so that they stay a little firmer. Made way more chicken so that there would be leftovers but had way less leftovers than expected. I guess the sign that it was a hit. Served with the awesome corn pudding, real nice compliment. Great summertime meal.

Trees, Seeds, and Beans (Broccoli Slaw)

A favorite at our rehearsal dinner for my sons wedding. Small changes ... Grated the carrots, added small dice sweet red pepper 1/4 c, 1/4 mayo and 1/4 cup Greek yogurt. Did cook for one minute with 1/2 tsp baking soda, after putting in strainer, dunked in ice water and then on to paper towels two times to get as much water off ofthe broccoli as possible. Didn't add any salt as I used roasted salted sunflower seeds. Rest of ingredients were the same. Easy would do again

Cherry Crisp

Took some suggestions from others... Did 1 1/2 times the crisp, sprinkled about a third on bottom of the pan, only softened butter part way, cut back on the sugar and added some toasted wheat germ. Only used half the cinnamon and of course chopped pecans. So it doesn't get mushy for the crisp try using old fashioned oats not quick cooking Only used I can of cherry pie filling LITE and only 1/2 tsp orange zest (would probably pass on the zest next time) might also use extra 1/2 can of filling. Made for 4 people. BIG hit my grandson had three servings and asked that this dessert be on the list to make for Christmas. So I'll be making this again for sure.

Beef and Cabbage Stew

Only change I made was to cook in my pressure cooker. Total recipe took about 1 hour start to finish. Really impressed the grand aunt and was so easy!!

Pumpkin Cobbler

My mistake, used 2% evaporated milk, but did add an extra egg. The small amount of butter didn't fully cover the cake mix on the top so most was dry and tasted like dry cake mix. Don' t think I will make this again, there are too many other recipes to try

Tina's Greek Stuffed Peppers

Only a few small changes .... Half the recipe so used 1/2bag of fresh spinach chopped, about 1 1/2 cups of canned chopped tomatoes so that there was enough moisture. Some on the bottom of the pan and a little on the tops, only had 2 peppers so cut in half and mounded with the filling. Had to use half sharp cheddar and Parma, also a pinch or two or red pepper flakes. Oh yes also finely grated one small carrot just to add extra veggies. Baked 30 minutes, the peppers were tender and moist, I would call this one a winner!!

Cod with Italian Crumb Topping

The changes were minor... I used half the fish and the full amount of crumbs, also used half whole wheat panko crumbs and the other half original bread crumbs. Instead of black pepper I used lemon pepper. The fish was excellent flaked beautifully and was very moist. Definitely a keeper.

Grilled Rock Lobster Tails

This was very tasty and easy. I used smoked paprika instead of sweet paprika,by accident. The result was very tasty. Would make this again, next time the lobster tails are on sale.

Cilantro Chicken and Rice

An excellent "stick to your ribs comfort food". Although I did half the recipe, I also added some diced mushrooms, carrots and celery. Used the whole can of mild green chilies and served Siracha on the side to give it a kick. Super easy one pan meal and added side of steamed broccoli.

Peach Muffins

I got excellent reviews. Changes made 2 cup all-purpose flour and 1 whole wheat white, 3/4 cup each brown and white sugar, 1 cup oil and 1/4 half and half, 1 tsp baking soda, 3 cups peaches. They were delicate and flavorful. A few had tops that wanted to come off without the bottoms and had enough for 12 muffins and one 4x8 loaf. Will make again for sure.

Healthier Grandmother's Buttermilk Cornbread

Creamy Mushroom Soup

Made this soup last night with following changes...first I doubled the recipe then used 1 box portobello and 1 box white button mushrooms. Instead of using 1/2 and 1/2 used a little extra flour and 1/2 tsp hot curry powder and 1 tsp regular curry powder and let it cook for a few minutes to let the curry "bloom". Then added 1 % milk. I blended all of it but it would have been equally good with only half of soup blended, so there was a little more texture. I didn't use the cinnamon. Had a soup similar to this out in California and thought their curry add an interesting flavor. Even better the next day.

Quick Chicken Piccata

Panna Cotta With Fresh Strawberry Sauce

Made this yesterday and it was excellent. The only changes I made were with the strawberry sauce as follows: used 1tsp vanilla, 3 tsp Grand Marnier, alittle less on the sugar, 1/8 water and 1/8 orange juice. Also used 2 tsp arrowroot powder as it was being reduced. It seemed to give the sauce a little more body. Will definately make again. Might be excellent with peaches and raspberries when they are in season.

I found this recipe on this site about 5 years. The comment was I have to make this more often. It is easy and is a favorite every St Patrick's Day to be sure!!! I did not make any changes and never have any left after dinner. ????
