Cajun Appetizer Meatballs

Reviewed: Sep. 23, 2010
These just are so yummy. I did 1/2c head country mild BBQ and 1/2c head country spicy and 3/4c of peach jam. Sooooo good. A nice little spicy kick. A huge hit at the SB party :)

Sedation

Reviewed: May 12, 2010
It was very sweet (which I knew by the ingredients). I likened it to a Sex on the Beach with a coconut flare. Personally I am not a fan of coconut in my drinks (bad experience). But if you like sweet and coconut w/o a heavy alcohol flavor, you would def. like this drink.

Appetizer Meatballs

Reviewed: Sep. 23, 2010
Wow - OK - I wish people would be more specific about flavors during their reviews - just saying "tastes great" doesnt get it - Like this recipe - tastes great, I guess if you LOVE ketchup. The ketchup was very overpowering. Thats really all I personally could taste (but I dont use ketchup on anything I eat so I try not to typically rate something based off of my tastes) but I made this for a pot luck lunch - no rave reviews - they werent even all finished - very disappointed based on the reviews given - I know my tastes arent the norm, Im very picky, but I expected more based on the reviews - Sorry. EDIT: Made this again - tried to cut back on the ketchup - the hubby likes this sauce alot but me and the boy think its basically fancy ketchup

Cajun Roasted Pork Loin

Reviewed: Sep. 27, 2010
Excellent flavors!! My mouth was watering when the butter and spices were on the stove. I had to adapt the cooking style and choice of meat for what I was using (Electric smoker) and really wished I had gone with the loin in the oven cause the only thing that I didnt like was the cut of meat (I used a pork butt roast cause it was going to be on overnight and didnt want to have dry meat) But this cooking method got me a crust on top of the meat that was just to die for. I didnt think it was at all too spicy (or hot) In fact I may even add a little more cayenne pepper next go around. I also didnt have a chance to make the gravy which I might try tonight with the left overs. Thinking of making "pulled" pork sandwiches and using the au jus as a dipper. Also my roast was 9 pounds so I tripled the recipe - IMO you should definitely double up on this recipe if you like lots of flavor

Easy Garlic Chicken

3.5 stars - Great flavor - I did 8 cloves and it was very garlicky. Wasnt crazy about the bread crumb/baking texture of the crust - May be unhealthier but pan frying crispy would be extra yummy

Chicken Enchiladas with Creamy Green Chile Sauce

Reviewed: Aug. 9, 2010
Very good - hubby loved em - I thought they needed salsa to go with them and I didnt have any on hand :( I found a great way to make the chicken for any mexican dish though - so Im happy about that (I took the chicken breasts and mixed 2/3 c. water and 1 packet of taco seasoning - baked, covered, till done - shredded chicken and returned it to soak in the leftover juices and added chopped onions and pablano chilies - so my filling had a nice kick to it) I, personally, was overwhelmed by the cilantro and will definitely be eliminating (or greatly reducing) that the next time I make these - Overall very good!!!

World's Best Lasagna

Reviewed: Nov. 5, 2012
This will be a long one - I have had this recipe in my box for two years but shied away because everyone said it was so time consuming. The hardest part - as with any lasagna is the layering - I kinda screwed this one up but it came out great. I didnt add any extra salt at all and went a little heavy on the seasoning. Except for the fennel - We dont like it so I added about 10 seeds to the meat when i browned it thereby giving it plenty of time to cook away. I used 1 1/4 lb of hamburg and 1/4 pound sausage (which has fennel) and the sauce was very very meaty - I think I might double the sauce next time and keep the meat the same. I added 1TBSP of sugar and it was a bit too sweet for my liking but not bad. I definitely had to go heavier on the herbs and spices for my taste but this was still a great starting point for the sauce and I think I ate a 1/4 of the sauce while it simmered for about 3 hours LOL. To me everything else you dont need a recipe for. I also used the no bake lasagna noodles and they work great!!!! I doubled the ricotta and would have added more mozzarella had I had any more on hand. It got rave reviews by the family and a friend who tasted the left overs. And the extra sauce was handy as we a re saucy people and used every bit.

Millionaire's Cake

Reviewed: Oct. 4, 2010
Excellent recipe. I wish I had followed it to the "T" tho - I tweaked it a tad going by what I thought would make it better for me. Added a little extra batter (not too much) and only had a 20oz can on pineapple and didnt spread all of the pudding mix. It was very good, everyone loved it but I definitely feel this cake wouldve been even better had I followed everything exactly. Cause there was a bit too much cake and whipped topping and not enough pineapple or pie filling. It was so nice though to find a great dessert for people who love sweets but arent big on chocolate. Because this recipe takes the "cake" if thats what youre looking for. May top it with some toasted coconut next time for an added kick cause altho I love love nuts they just didnt seem to fit well with this. And, as one reader said, it was even tastier the next day. So next time I may let it set for at least half a day. EDIT: I added a pic of a piece - please be kind as this was the very last piece that was left and I had to try and make it look edible. Also note how big the cake layer is - I def. think all the layers should come out about equal in height for the most delicious result ie...my cake layer was too big but as I mentioned earlier I added a bit more than half - I made cupcakes out of the leftover batter - should have enuf batter for 12 cc 3/4 full - I only had enuf for 9.

Florentine Chicken Ring

Reviewed: Jul. 21, 2011
This was a really good base recipe - Not a fan of frozen spinach but still enjoyed this very much. Next time I think I will spice things up a bit with some chili powder on the chicken when cooking (refuse to use canned chicken - sorry) and some red pepper flakes to the mixture. I wish mine came out as pretty as the picture though (I halved the recipe as there is only two of us and had enough left over for one lunch the next day.)

Chicken Fettuccini Alfredo

Reviewed: Jun. 20, 2011
Everyone liked it alot - There was just a little something missing for me in the cheese sauce - a little zip/zing in the sauce - maybe some asiago or more parm is needed but other than that a great recipe for my first time making homemade alfredo - didnt come out grainy at all for me - But I followed advice and took my time and stirred well

Ocean Spray® Oatmeal Cranberry White Chocolate Chunk Cookies

Reviewed: Nov. 29, 2010
DRY- not hard but dry - like chewing sawdust - I cut back on the flour and added a ton of extra butter (not all at once) as I altered the butter I would bake 2 or 3 to see what they would come out like - Never ever got a cookie that was good IMO - the hubby thought they were pretty good but dry also - I finally got a decent cookie when I flattened the cookie - I did like the flavors just could get the right texture/consistency - gonna try the oatmeal cookie recipe on the oats carton and add cran & white choc chips n nuts next time EDIT: I would really love for someone to explain to me the why the reviews are so one side or the other - Did those of us who got a dry cookie do something wrong? I rally want this recipe to work because the flavors were good

Schweinebraten Pork Roast

Reviewed: Jul. 19, 2010
Five stars cause the men of the house devoured it and raved about it (and that rarely happens). Me, personally, I wouldnt drink a beer if lost in a desert with no water, so I just couldnt get into the flavor - all I could taste was the beer (but I was the only one) I also thought it was way to heavy on the black pepper (again not a flavor I enjoy) - that was the only thing I could taste when I made the gravy, so I didnt serve the gravy. Next time around I am going to cut way back on the pepper and try it with a hard cider instead of beer

Jalapeno Popper Mushrooms

Reviewed: Mar. 29, 2012
Restaurant quality - even me and my daughter (two people who really dont like mushrooms) thought these were fantastic and the mushroom lovers at the table agreed wholeheartedly - Next time I may add more pepper(I actually used a Serrano)because I would have liked a bit more kick for my taste buds - Oh and I added a layer of mozzarella cheese to the top of these before baking - It was a wonderful addition

Chicken and Bowtie Pasta with Asiago Cream Sauce

Reviewed: Jun. 21, 2011
Did not like the sauce really - Mine turned out kind of grainy and the minute it started cooling off it was no good at all - I had to re-heat my dish 3 times while eating. I added broccoli and spinach instead of mushrooms cuz thats what I had at home - I also used whole wheat pasta. Im not sure but maybe my sauce wasnt that great because I used half n half instead of cream and only 2 cups (as I agree w/ another I think it would have been too runny if I had added the extra 1/4 cup). I give it three stars because the chicken and veggies came out yummy - Ive got some leftovers that I didnt put any sauce on and Im gonna try it for lunch with just some olive oil and garlic

Incredibly Easy Chicken and Noodles

Reviewed: Dec. 6, 2010
Really pretty good (more like 3.5 stars) and also a very quick and easy winter time comfort meal (Reason I gave it 4). I cut the recipe in half as I was only cooking for two - and there was still enough leftover for lunch the next day. It is a little on the "canned soup" taste side but overall not that bad. Im sure you can doctor it a bit to help mask that flavor. I used hard noodles and boiled for 5 minutes (al dente) and added them and they came out fine. I also wish I had gone with my first instincts and used a bit more chicken. This would be a great quick meal if you got a rotisserie chicken from the deli and used that - the added flavor would be welcomed. Very happy though and will make this a keeper for winter meals.

Delicious Ham and Potato Soup

Reviewed: Dec. 2, 2010
TOTALLY AWESOME RECIPE!!!!!!! Best soup Ive ever made - A great base soup for any creamy soup recipe. The flavors were excellent (a little buttery but I used Yukon Gold potatoes cuz thats what i had on hand). I had all the ingredients leftover from Tday so not only was it super easy and very quick to prepare - it actually didnt cost me a cent to make because I had everything on hand and would have most likely thrown alot of the stuff away in a couple days anyways - I used carrots instead of celery - personal family preference. Dont pass this recipe up this winter - This is a must make!!!
