Chicken, Feta Cheese, and Sun-Dried Tomato Wraps

I threw this together with leftover (non-marinated) chicken from last night, in a defrosted tortilla (not the best texture). It was delicious and I can't wait to try it with the marinated chicken. I cook for one, so I always have left over chicken breast - this is a great way to use it up and combines some of my favorite ingredients! Next time I may try it warmed. Has earned a spot in my regular rotation. Thanks!

Cucumber Sandwich

I followed this recipe pretty closely except for the following: no sprouts, used pita bread. The pita bread made for a very messy sandwich, so I probably will use regular bread next time. However, I didn't think this sandwich had enough flavor. I'm not a big cucumber fan but trying to incorporate different veggies into my diet. I tossed the cucumbers and tomatoes in the vinegar and oil but didn't think it added much flavor. For me, the banana peppers saved the sandwich. I didn't really taste the cream cheese. I will probably play around with this recipe and make it again, but I was not too impressed.

Peanut Butter and Banana Smoothie

Excellent smoothie!! I used skim milk and only 1 tablespoon honey (blended in). Next time I will try a frozen banana (it's a bit warm) and maybe omit the honey all together. If I had it, I would have also added wheat germ or ground flax seed. Thanks :)

Vegetarian Chickpea Sandwich Filling

Yum! Another inexpensive, easy, and tasty recipe. I really enjoyed this, and it is a nice change as I never use dill weed. I did not use the onion in this recipe, but it was still kept crunchy with the celery. Next time I may add chopped cherry tomatoes. Very good - keeps well so you can enjoy leftovers the next day.

Apple Tuna Sandwiches

Very quick, tasty, and easy! Also uses inexpensive ingredients, which is a huge bonus for me. I made a few substitutions based on personal preference and what I had on hand - I used Granny smith apples (loved the tart flavor), omitted the onion, and used regular dill relish. Very good as a sandwich or whole what crackers. Next time I may add dried cranberries.

Feta Eggs

I followed this recipe pretty closely except for a few things - once the butter had melted, I poured some of it out. I also omitted the onion as I did not have it on hand. Overall, this is a good recipe and a great way to use up tomato and feta cheese. I suppose you could experiment with other cheeses as well. Next time, I may use more cheese - but this recipe is pretty spot on as is. :)

Quick and Easy Sauteed Spinach

This is a very easy recipe, and I like the idea of combining olive oil, garlic, spinach, and parmesan. However, it is much too salty for me (and I love both garlic and salt!) I almost could not finish it. Granted I did not use the entire bag of spinach (almost) - but I also only used one tsp of garlic salt. I think next time I will cut way back on the garlic salt or use fresh garlic as others have suggested.

Best Brownies

EDIT: Bumped up to 4 stars - I put these in the fridge as another reviewer suggested and the next day they are definitely denser and fudgier. :) I did not make the frosting for this brownies - so the review is for the brownie only. This is the second time I have made these brownies. The first time I made them for a small group and everyone liked them. Personally, though, I prefer a more chocolatey and fudgey brownie. I stirred the mix by hand, so maybe that is why they turned out the way they did. This recipe is a good base and can easily be spiced up with add-ins. It just didn't blow me away.

Pesto Grilled Cheese Sandwich

It's official - I'm never making regular grilled cheese sandwiches again! This was sooo delicious and filling! I used Italian multi grain bread and used 2 slices of Provolone because I do not really care for American cheese. I may substitute one slice for Swiss next time for more variation. This was very easy and a wonderful twist on a classic. This recipe has a permanent spot in my weekly rotation! :)

Grilled Apple and Swiss Cheese Sandwich

This sandwich was good, but needed a little more 'zip.' I will have to experiment, but this is definitely a good start. Very quick and easy, the cheese and apple pair nicely together. I made it using my George Foreman.

California Grilled Veggie Sandwich

I was unable to find foccacia at my bakery, so I used Italian multi grain bread. I also do not have a grill, so I followed the advice of other users and broiled instead. I coated the vegetables in the oil and broiled them 3 minutes on each side. I then broiled the bread to melt the cheese. I may have over broiled slightly, but the sandwich was still very good. I imagine it is outstanding with the foccacia! Great way to work in some veggies. Thanks for the recipe.

Turkey Bacon Avocado Sandwich

I made this recipe using Italian multi grain bread from the bakery. I followed the recipe as directed, using a little less bacon and no tomato (not ripe yet!). It was very quick, easy, and tasty - I will definitely add it to my regular lunch rotation.
