Caramel Apple Pork Chops

My husband wants to rename this to Holy Cow They're Good Pork Chops! He loved it! The were quick, easy and so tender. I had started making this recipe, when I realized I didn't have any apples, so I substituted with plums, I sauteed them in the butter till mushy, then added the remaining ingredients. When you brown your chops, try using a pork seasoning on them rather than salt and pepper. The flavor was amazing. I also added a little liquid smoke while browning, and it smelled heavenly. My husband asked for them twice in the same week, so ya know they gotta be good!

Stuffed Zucchini

This was a pretty tastey meal. I used about half the removed seed mixture, and added a clove of garlic, fresh basil, and partially cooked rice, the rice gave it a little more bulk. Half way thru baking, I sprinkled with parmesan and it turned out delicious. It's not a real quick meal, but the results are well worth it. Another way to stuff the zuke, would be to cut off the stem end, and insert a filet knive, cutting out the insides, and a spoon for the very bottom, it makes for a cool presentation. I didn't do that with this recipe, but have with other ones. Enjoy!

Beef Tips and Noodles

This was a good hearty meal. Rather than using canned mushrooms that taste like a can I cut up about 6oz of fresh. Instead of an entire packet of Onion soup mix I used all the onions and half the seasoning...that would have been a little salty. I browned the beef tips with a little butter and the soup mix in my pressure cooker, then added the remaining ingredients, put the lid on and cooked for 30 min. The beef couldn't have been more tender, and my husband loved it. I'd rather not heat the house with the oven...if ya know what I mean, plus this was quicker, and probably more tender. I would highly recommend this to anyone looking for a quick and easy recipe.

Cheese Filled Triangles

This was delicious! My husband had complained that I make too fancy of food, so I made him hot dogs & mac and cheese and made half this recipe for myself. I was ooooing and ahhhhing about it, and saying how good the triangles were. He kept looking at his food then at mine. I left him the smallest one, and told him he could have it if he really wanted to try it...ya know with it being so fancy and all. He loved it and begged me to make more. Humph...that'll teach him! Interesting food doesn't have to be scary! Try this recipe as finger food for company, and they'll love it too!

Tuna Curry in a Hurry

Oh my! This was delicious! My husband actually wanted me to make it again the next night! I varied the recipe a little. I used half the sour cream and stirred it till it was smooth and melty then added two and a half cups water, and half a bag of egg noodles. I stirred it all together and brought it to a boil, I let it simmer for about 8 minutes, then served. It was like home-made tuna helper. I added a little more curry and also some lemon pepper for a little zing. It was wonderful! I will definately make it again...hopefully not two nights in a row though.:)
