I'm a veggie foodie, who seeks enjoyment in trying to find proper substitutes to fit my lifestyle. I'm a crazed health nut who believes that the root to proper living and happiness is food and healthy cooking.
My favorite things to cook
Low-calorie and anti-Inflammatory. I absolutely love my Spinach and Quinoa Salad as well as my guacamole. Alternatives for meat and gluten are always made to be fun rather than a hardship. As well as a consistent, healthy diet, I never pass up a chance to bake.
My cooking triumphs
I was baking a cake for my boyfriends birthday. While transferring it from the oven to the counter, it seperated in three. I managed to save it. In my, and in many others opinion, it was lovely!
My cooking tragedies
My best friend and I made pastries for Christmas a few years back. Final outcome, the batter had an uncanny resemblance to mud and I believe I had batter on my necklace for the following 6 months.

Cheesecake Cupcakes
I used three eggs instead and only half the quantity for the topping seeing as the recipe was already quite rich. Amazing nonetheless.

Gluten-Free Cheese and Herb Pizza Crust
I recently tried this recipe; it had a wonderful outcome. I eat gluten free and I am close to someone with a mild form of autism, which also requires a gluten free diet. Both of us enjoyed this very much. There were a few tweaks here and there, but mostly for preferred taste.

Chocolate Chip Cookies (Gluten Free)
I'm looking forward to trying this recipe. It's going to be the first time I use an egg substitute and hopefully, the outcome will be positive. It's great that more and more people are cooking gluten-free for so many reasons.
