Easter Breakfast Casserole

This recipe turned out great! I read the reviews after making it, only to find out that people were having trouble with the hashbrowns cooking all the way through unless they precooked them. I had no issue with this, but I wondered if those that did were using the diced potato "homefry" style and confusing it with the shredded potato "hashbrown" style. I used the frozen shredded potato and it cooked all the way through, no extra steps required and it tasted great! I did add 1 teaspoon salt, but that is my preference.

Cherry Pie III

Instead of sour cherries, I use one 16 oz bag of frozen dark sweet cherries pitted, or fresh dark sweet cherries. It gives a great flavor that goes well with the almond extract. This pie recipe is awesome and the cherries can be replaced with any type of fruit to make any type of fruit pie!
