Spaetzle I

Yummy! I a German friend of mine uses milk as the liquid instead of water, but I can't tell that much difference. I visited there recently and bought two very inexpensive spaetzle makers--one for short and one for long spaetzle--so it's MUCH easier to cook. I also find that using 1 teaspoon of salt per cup of flour works well (I guess it leaches out into the cooking water somewhat). I'm glad to have this recipe, because my friend just dumps stuff in the bowl without measuring!

Butter Cookies II

I lost my "old faithful" spritz cookie recipe, but this is every bit as good. I didn't need to chill the dough, and I removed them from the oven at the first miniscule hint of browning (my family prefers soft cookies over crisp cookies). Thanks for sharing this!

Cream of Mushroom Soup I

YUMMY!!!! So good I had to lick the bowl! :-) I didn't have chicken stock, so I used a beef bouillon cube with water, and I liked the flavor. I made a double batch and simmered the mushrooms in a dutch oven so I could use a hand-held stick blender--much easier to clean than a blender or processor.

Apple Loaf

Great loaf! I wanted a bread, not a cake, so I halved the sugar (I used brown instead of white) and it was plenty sweet. The teaspoon of cinnamon I added was a bit too much for the apple flavor, so I'll use 1/2 tsp. next time. I'll probably increase the amount of fruit or add applesauce like others suggested to make it a bit moister next time.

Tea Biscuits

GREAT!!! The taste and texture were quite wonderful. I left the butter in slightly larger pieces, which I think adds to flakiness, and I got eleven 3-inch biscuits out of this recipe. The first person who tried them said they were much better than his wife's, and he asked for the recipe! I've tried several other popular biscuit recipes from this site, and I like this one the best.
