Taco Seasoning I
Just like everyone says... No reason to buy packets any more! This was very good. I add some home made salsa to the meat because it's the only way to get fresh veggies in some of my family members. Tomato sauce is a good way to thicken it up, too.

Tex-Mex Turkey Soup
I had almost all the ingredients in my house the day after Thanksgiving so I tried this. (No parsley) I let the carcass boil in the broth for a while to get the rest of the turkey off. I accidentally put the whole jar of salsa in before I read 8oz so I just left out the can of chopped tomatoes. I'm not a huge fan of them anyway but it worked out perfectly. You could spice it up by adding a hotter salsa or any hot peppers you like.

Baked Salmon Fillets Dijon
I'm not fond of fish but I'm trying to incorporate it more and more. I used this recipe with sockeye salmon which is supposed to be the best tasting. I only had honey mustard and olive oil with the bread crumbs and it was fantastic. I used the outside grill since I hate stinking up the house with fish. But I swear this tasted like CHICKEN!! It was AWESOME!!
