About this Cook
I'm not an expert cook nor very daring with my food but I do like to try out a few experiments every now and then. Now that I'm living abroad, however, I tend to get those hometown, comfort food cravings pretty often.. which I can no longer buy off the shelf. So now I spend time trying to figure out how to make all those favorites myself from scratch and share them with my friends and family here. Wish me luck! :)

Swedish Meatballs (Svenska Kottbullar)
Love this recipe and I've been using it for a while now! I was wary of the spices at first but now I'd never make this without them. I use a bit less sour cream because I found it too strong the first time around. I also find the baking instruction to be pretty flexible. If I don't have the time, I just pour the chicken or beef broth in the pan, cover it and let them finish cooking. Easy!

Walnut Banana Bread Pudding
The flavor is fantastic! Reading the reviews on how the coconut flavor doesn't come through, I added 1/2 tsp or 1 tsp of coconut extract and it was perfect! However I found this bread pudding to be a bit greasy. In fact I halved the amount of butter because I just didn't find it necessary and I substituted the heavy cream with skim milk. I've never cooked/ baked with coconut milk before so maybe it makes things naturally oily...? But even with the changes I made, I still find it a bit heavy on the stomach. Very delicious though! Just not quite the light breakfast bread pudding I was expecting.
