Cookies 'n Cream Cake

Reviewed: Aug. 13, 2013
This would have gotten 5 stars but the frosting is a little weird. I was hesitant to use that much shortening for fear it would taste 'waxy,' but decided to try it this time and see what happens. My fear was spot on - the frosting tasted just fine but had a waxy texture. Is there another way to make the frosting without using so much shortening, or something else you could use instead....? I also used closer to a cup and a half of cookie crumbs in the cake mix, instead of just a cup. It was just right! Also used some crumbled cookies in the frosting rather than garnishing with the cookies.

Cake Balls

Reviewed: Aug. 13, 2013
I have made these and taken them to work 3 times now - every time they've gotten raves! The first time I used a strawberry cake mix, chocolate frosting and chocolate bark; second time was chocolate cake with a little bit of Kahlua flavoring, chocolate frosting and vanilla bark; and this last time was cherry chip cake mix, vanilla frosting and chocolate bark. You could really do just about anything with this recipe. I form them with a cookie dough scoop and usually freeze them overnight before dipping. I will say, though, that a whole can of frosting mixed with the cake is too much. I use a half can or just slightly more and that's plenty. Otherwise they get goopy and don't want to harden very well.

Bacon Ranch Pasta Salad

Reviewed: Feb. 16, 2013
This is my go-to pasta salad recipe! I've taken it to work barbecues, wedding receptions, potlucks, you name it, and there's rarely ever any left to take home. I do think its better if you make it the day before, though. It seems better if its say in the fridge overnight. I think all the different flavors have a chance to come together and it makes it all the better! SUPER YUMMY!

Best Brownies

Reviewed: Feb. 16, 2013
I made this recipe for a Super Bowl party (and because I was craving brownies!). Everyone raved about them!!! They are super good and very easy. I forgot to frost them while they were still warm, so just warmed them up very slightly in the oven while I was preparing the frosting, and had no problem. Be prepared, though, as the frosting begins to set up quite fast - spread quickly! Be careful not to overbake the brownies either. You'll never use another brownie recipe again after trying this one!
