Basic Broiled Chicken Breasts

Started with broiler on high; had to move the chicken lower and then turn it to low (dang smoke alarm). The medium sized pieces cooked perfectly 10 min ea. side as per recipe; one larger piece took an extra 5 min. Lovely flavour and made a wonderful gravy w the pan drippings.

Lebanese-Style Red Lentil Soup

Great flavor; halved the recipe; found it a bit too thick; will add more liquid next time. Second time I made it: Made fresh veggie stock; 1 c lentils, 1 TBSP cumin, no cayenne, baby spinach, TBSP lemon juice (bottled) - not 3/4c and Matouk's hot sauce (1/8 tsp) at end after pureeing

Grilled Rosemary Pork Chops

Excellent flavor...was skeptical about the amount of rosemary, thought it would be overwhelming, but REALLY delicious. Marinaded chops all day. Served with vermicelli noodles and a veggie stir fry (you could easily use the reserved marinade as sauce for the stir fry...we didn't need it grilling the chops)

Quick and Easy Chocolate Mousse |

Softened cooking dates in boiling water and added a bit to the recipe as well to blend more easily. For something that looks pretty unappetizing (brown green), it's really good!

Easy Lasagna II

Husband (former chef) says this is the best he's ever had. And I used no-cook straight-to-the-oven noodles; ran out of mozzarella so used extra parmesan, bottled marinara sauce, and added baby spinach to the meat mixture. baaaaahaaaaaa!

Fresh Pear Cake

This is such a good recipe - family loves it! I use only 1 cup rather than 2 of sugar and whole wheat instead of white flour, 1/3 c oil and 1/3 cup applesauce instead of 2/3c oil. Don't have a bundt pan (I have no idea why, My Big Fat Greek Wedding is one of my fave movies ever!) so use 2 loaf pans and reduce cooking time to 1 hr. House smells so good!

Thai Chicken Curry with Pineapple

Didn't have coconut milk so used double the amount in coconut water instead. Doubled the amount of curry and curry paste. Added a can of rinsed chick peas. Served with whole wheat Naan bread, with sides of plain yogurt and mango chutney just for fun. Delicious!

Couscous Royale

REALLY good. A friend gave me a package of Merguez sausage. Substituted thai chile paste (just a smidge) for the harissa. Didn't bother with the chicken; the sausage and chick peas were enough protein; the plain yogurt really gives it the one-two punch for an exquisite combo of flavors and texture. A keeper!

Sweet Potato, Carrot, Apple, and Red Lentil Soup

Used just as much olive oil as needed to sauté veggie n apple mixture. Added all spices at beginning while sautéing to really get flavors worked through. Easy and quick to make. Family loved it! Oh, and used ground ginger instead of fresh...and don't bother peeling apples or potatoes, just cut into bite sized chunks and skip the pureeing too!
