Mom's Chocolate Chip Cookies

Immediately upon having made these, I gave a 5 star review. And they *are* great cookies - they cook evenly, stay soft, and have a fabulous flavor. However, by the end of the batch I was almost dreading just how sweet each cookie was. I'm sure part of this could be alleviated by, as many other reviewers did, adding a tsp of salt. I do think I would go even further and cut out the 1/4 cup of white sugar. Otherwise, we made "Best Chocolate Chip Cookies" last night and I think that recipe would have to be my 5-star. But this is still a great one - especially if you were bringing the cookies to a bunch of people so the sweetness never became overwhelming.

Peach Ice Cream

Amazing. I combined this recipe with a peach gelato recipe for two reasons: I wanted a more intense peach taste (I had awesome peaches) and being pregnant I couldn't do the egg part raw. My ice cream turned out AMAZING and intensely peachy. Here are my alterations: (1) I did not puree the peaches, I just peeled and chopped and let them sit out a few hours, occasionally mashing with potato masher, this kept some of the texture (2) I only used 2 cups of heavy cream, and I used 2 cups of whole milk instead of cream. (3) I used 4 egg yolks and an egg white (the gelato recipe called for only yolks), and only 1 cup sugar (the gelato recipe called for 1/2 cup sugar). I stirred these together and gradually added the cream/milk mixture, which I had heated, whisking all the while. I then transferred the egg/cream/milk back to the saucepan and heated until almost boiling, definitely steaming. I put that back to room temp before adding the peaches and remaining ingredients, this hopefully killed the bacteria. Amazing recipe. I think the quality of the peach is key.

Best Brownies

I just made these again and this time I used only half a cup of confectioners' sugar for the icing. The icing was richer and more wet, the type that stays wet instead of solidifying. I liked it much better, the whole thing was more fudgey instead of so cake-like. Thus I am upping my review to 5 stars - these taste amazing and are easy to make.

Fresh Strawberry Upside Down Cake

I agree with the reviewer 2 slots below mine that says that this cake needs whipped cream or ice cream to really be enjoyable. I made it for a dinner and it was okay fresh out of the oven - not phenomenal or anything. Then, because strawberries are a fragile fruit, it REALLY didn't last. The reviewer two below says you really have to MASH the strawberries, maybe I didn't mash hard enough - the next day I have mushy strawberries and not the tastiest cake. I wonder about serving it chilled. But it definitely needs whipped cream or ice cream or something.

Fresh Asparagus Soup

Good Old Fashioned Pancakes

I don't even like pancakes but I LOVE these. I put a plug in for these on my FB page. Made them for myself this morning - put a little butter on top, a little maple syrup, fresh strawberries and whipped cream. SO GOOD. But good plain too - SO easy and the best pancake in the world.
