Cajun Roasted Pork Loin

I cooked it on the stove in a "spaghetti" pot for about an hour (until the pork loin reached 140 F). I browned the pork loin and put it in the spaghetti pot, then cut slits in the pork to put the marinade in and covered the pork with cut up sweet potatoes, carrots, poblano peppers, turnip, parnsip, rutabaga, onion, and mushroom. And put spices on top of the vegetables..and added 1/4 cup of chicken stock. DELICIOUS!!!

Apple Chicken Stew

This is a delicous meal for those cold days. I substituted sweet potatoes for regular potatoes, and a yellow onion for the red onion. Also, I did not include carrots or celery or the caraway seeds because I didn't have them. I did add frozen green beans for a green vegetable. In addition to apple cider, I added 14 oz of chicken stock as well. I also used more apples because I had bought to many at the store. I also used more spices and added garlic. When the stew only had 30 minutes left, I added quinoa to it. Delicious. My fiance and I both added additional spices for our liking before eating it.

Slow Cooker Mediterranean Stew

This is a delicious stew. I did double the spices as suggested. Instead of squash, I used sweet potatoes. Used green beans instead of okra as suggested. Used chicken broth instead of vegetable broth. Cooked on low for 4.5 hrs and wasn't done so let it cook while I was out. It cooked for 10 hrs or so on low and was delicious.

Ham and Brussels Sprout Bake

This was delicious! I bought ham for making sandiches, which when cut up is rather slim. This would be a good dish with cubes of ham. I sauteed the mushrooms before combining with the other ingredients. I doubled the recipe, but it seemed it was a little oily, so perhaps I"ll use less oil next time. Otherwise, delicious!

Portuguese Pork with Red Peppers

This was delicious. We doubled the pepper sauce and added ground almond flour instead of corn starch to thicken the sauce.

Chicken with Garlic, Basil, and Parsley

This was an excellent dish. I used oregano, chili pepper, salt, pepper, and basil for the spices. I also added zucchinni along with the tomatoe. It was delicious!
