Megan's Granola

I make this constantly for my husband who loves it for breakfast as well as a snack at work. I have had some issues with clumping, but discovered it had a lot to do with how I was mixing the ingredients together, as well as the tendency for my cheaper pans to warp- fortunately have fixed this issue, and it continues to make my husband very happy in the morning!

Chocolate Velvet Ice Cream

Super easy, really amazing homemade ice cream! Included a shot of Kahlua and finely ground up peanut butter chips with nuts. My husband loved this- we gilded the lily by pouring on melted dark chocolate truffle. Took the previous reviewers' advice and mixed the ingredients via blender, let it sit in the refrigerator to set for a few hours, and then blended with the ice cream attachment on my KitchenAid. Amazing soft serve and even better after it ripened in the freezer for a few hours!

Pan-Seared Ahi Tuna with Blood Orange Sauce

Agreed with other reviewers- a quick sear in a hot cast iron pan should be no longer than a minute or so per side for the fish. I subbed in mirin for the white wine and regular fresh squeezed orange for the blood orange juice. Layered sliced tuna over a green salad, with crumbled blue cheese and edamame and drizzled the sauce on top- worked out wonderfully!

Barbeque Pork Two Ways

Very easy- made adjustments by adding cajun spice, a bottle of hard apple cider, a small amount of honey and Spanish paprika, and halving the ketchup with bbq sauce as indicated by previous reviewers. I did slice the pork in large chunks since I had six pounds of pork shoulder and wanted to make sure the liquid adequately covered all parts. Served with Boudin rolls- very easy for company.
