Tater Tot Casserole II
I followed the recipe except I added a package of low fat cream cheese to the topping. Everyone loved it. Hubby told me to make it again tomorrow??? =P

Parmesan Roasted Corn on the Cob
This was amazing! After I wrapped the corn with foil, I placed them in the oven for about 30 minutes on 350. The cheese stuck to the tin foil quite a bit, but left a wonderful flavor on the corn. (Next time, I'll make sure to use non-stick foil.) The corn was perfectly crisp yet still tender and very juicy. Absolutely no need for butter. I've never had corn on the cob that was better. Amazing recipe!

Red Pot Roast
I made a couple changes to the sauce (added some minced garlic, a little bit of red wine, and a few drops of worcester sauce), but still cooked as directed. After the two hours of baking in the oven, the vegies were still quite hard but the roast was done. I stuck everything into my slowcooker for another half hour on high, so that the vegies would soften up. I wish I would have just used the slow cooker to begin with, because the meat was very tough and dry. Sauce was quite good though and made for an excellent rue. I doubt I'll make this again though, it wasn't really a hit with the fam.
