Tiny Pecan Tarts

Mom was never one for baking but this was her specialty. I've been looking to recreate this treat from my past and this recipe did the trick. The only things I changed were reducing the brown sugar to 2 cups instead of 3. They were still plenty sweet and oh so yummy. I also reduced the baking to 18 minutes instead of 30. A tip... even though you want to pop one in your mouth immediately, let them cool down completely before popping them out of the tin otherwise they're so flaky they fall apart and make a big mess. Thanks for this recipe... I'll be making it my specialty now!

Mango Pie

Absolutely love mango pie! Reminds me of Hawaii - boy do I miss having a mango tree. Since it's hard to find green mangoes now, I use ripe but firm mangoes for this recipe. Usually 4 large mangoes is plenty. I also substitute cinnamon instead of nutmeg. Hot out of the oven with a dollop of vanilla ice cream is the ultimate!

Lemon Cake

This cake was a hit at the office! It's especially tasty when it's super chilled with extra lemony coolwhip frosting. I wasn't able to find the lemon cake mix that a lot of people suggested but I did use lemon pudding for both the cake mix and frosting. So quick and easy to make! Light, lemony and refreshing!!!

Italian Chicken

Easy and delicious! I did make a few modifications. Marinated the chicken (used tenders instead of breasts) overnight in Zesty Italian dressing. Before baking, I lightly coated the chicken in Italian breadcrumbs/Parmesan then sprayed with nonstick spray to crisp up in the oven. Very moist & tender! Served with risotto and and roasted asparagus.

BBQ Chicken Pizza II

Quick & tasty! Used store bought fresh pizza dough... while pre-baking the dough for ten minutes, I grilled the onions, peppers, and chicken. Ended up doubling the chicken and halving the bbq sauce. Assembled the toppings and sprinkled with cheddar jack and baked for another ten minutes... yum-o!

Orange Rice

A little too tangy and sweet but with some adjustments this could be a hit... I made it according to the recipe except for substituting regular brown rice and omitting the butter. Next time I will reduce the OJ to 3/4C and add some garlic and chives to make it more savory. I will also omit mixing in the mandarins and just top the rice with 1/3 of the mandarins. Best served with something simple like grilled chicken so there's not a lot of sauce or clash in flavors with the rice.
